New! We took our YEP (Youth Employment Program) kids out to the Blueberry Lane Farm on Mt. Garfield Rd. Mrs. Barnes, the elderly woman who owns the farm has been unable to harvest them this year and called to ask for help. These berries were planted in the 1940’s and have been unsprayed for the last 8 years. They are an old fashioned variety known as the Rubel, great for pies and fresh eating, as well as some Jerseys. Come sample! This week we again have lots of Sungold, Sunsweet & Black Cherry tomatoes,  red cabbage, cukes, sweet & hot peppers, and our two types of mixed greens. Laughing Tree Brick Oven Bakery of Hart

Owned and operated by Charlie and Hilde Muller.  We live and bake outside of Hart, Michigan in Elbridge Township in the heart of Oceana County.  Handcrafted, naturally leavened (average 20 hours from start to finish!), and baked in a wood-fired brick oven, this bakery is also Michigan’s only 100% Solar Powered Bakery! Charlie will be on hand this Saturday to talk more about our baking process, and will have plenty of the following breads:

West Michigan Wheat.  An everyday, light wheat bread with a creamy flavor and the subtle sweetness of Michigan red spring wheat $5.00 a loaf.

Hazel Road Rustic:  A moist and chewy 4-grain loaf featuring Michigan-grown wheat, rye, spelt, and barley.  An excellent keeper, we love this bread for big, sturdy sandwiches or as a late night snack slathered with butter and honey.  $5.50 a loaf.

Finn’s Pecan Raisin Pecan:  We are raisin’ our son Finn on Pecan Raisin Pecan…a bread so rich you won’t believe it’s not cake!  No sweeteners added—just a quarter pound each of pecans and raisins in every loaf.  $7.75 a loaf.

Oceana Round:  An Italian classic, this ripping and dipping bread is irresistible with its glossy interior and it’s large, surprising holes.  Yes, we put the holes there on purpose! .  $5.00 a round.

O’Batta:  Made using the same recipe as our Oceana Round, this elongated loaf takes its name from the word “ciabatta”, the Italian word for slipper.  $5.00 a loaf.

Griff’s 8-Grain:  A hearty 8-grain, 3-seed bread named for our big-hearted neighbor Jim Griffin.  This rich, chewy loaf is made with all organic grains and is sweetened with just a touch of West Michigan honey. $6.50 a loaf.

Third Coast Three-Seed:  Take our West Michigan Wheat bread and toss in an ample dose of sunflower seeds, sesame seeds, and flax seeds and wowsers!  The outcome is an extremely nutty and nuanced loaf that seems to be more than the sum of its parts. $5.50 a round.

Elbridge Parmesan Olive:  The cheese does not stand alone in this loaf!  Generous hunks of mouth-watering parmesan and glorious Kalamata olives in every bite—this sumptuous boule is not for the faint of heart. $8.00 a round.

Laughing Tree Brick Oven Bakery of Hart

Owned and operated by Charlie and Hilde Muller.  We live and bake outside of Hart, Michigan in Elbridge Township in the heart of Oceana County.  Handcrafted, naturally leavened (average 20 hours from start to finish!), and baked in a wood-fired brick oven, this bakery is also Michigan’s only 100% Solar Powered Bakery! Charlie will be on hand this Saturday to talk more about our baking process, and will have plenty of the following breads:

West Michigan Wheat.  An everyday, light wheat bread with a creamy flavor and the subtle sweetness of Michigan red spring wheat $5.00 a loaf.

Hazel Road Rustic:  A moist and chewy 4-grain loaf featuring Michigan-grown wheat, rye, spelt, and barley.  An excellent keeper, we love this bread for big, sturdy sandwiches or as a late night snack slathered with butter and honey.  $5.50 a loaf.

Finn’s Pecan Raisin Pecan:  We are raisin’ our son Finn on Pecan Raisin Pecan…a bread so rich you won’t believe it’s not cake!  No sweeteners added—just a quarter pound each of pecans and raisins in every loaf.  $7.75 a loaf.

Oceana Round:  An Italian classic, this ripping and dipping bread is irresistible with its glossy interior and it’s large, surprising holes.  Yes, we put the holes there on purpose! .  $5.00 a round.

O’Batta:  Made using the same recipe as our Oceana Round, this elongated loaf takes its name from the word “ciabatta”, the Italian word for slipper.  $5.00 a loaf.

Griff’s 8-Grain:  A hearty 8-grain, 3-seed bread named for our big-hearted neighbor Jim Griffin.  This rich, chewy loaf is made with all organic grains and is sweetened with just a touch of West Michigan honey. $6.50 a loaf.

Third Coast Three-Seed:  Take our West Michigan Wheat bread and toss in an ample dose of sunflower seeds, sesame seeds, and flax seeds and wowsers!  The outcome is an extremely nutty and nuanced loaf that seems to be more than the sum of its parts. $5.50 a round.

Elbridge Parmesan Olive:  The cheese does not stand alone in this loaf!  Generous hunks of mouth-watering parmesan and glorious Kalamata olives in every bite—this sumptuous boule is not for the faint of heart. $8.00 a round.

Laughing Tree Brick Oven Bakery of Hart

Owned and operated by Charlie and Hilde Muller.  We live and bake outside of Hart, Michigan in Elbridge Township in the heart of Oceana County.

What makes our bread unique?

Organic and Locally produced ingredients: All of the grains and flours with which we bake are grown organically and quite a few of them are grown right here in Michigan! .  Our breads have no added oils, no dairy products, no added sugar (the Griff’s 8-Grain does have a touch of Michigan honey).  They are simply flour, some cracked and whole grains, well-water (from our own well), and sea salt.  The ingredients we use are simple, but the process by which we turn them into bread yields loaves of extraordinary and complex flavor!

Naturally Leavened using a traditional, slow process: Nearly all of our breads are naturally leavened which means that rather than using commercial yeast to make our bread rise we use a starter called a levain which we carefully cultivated right here in our kitchen.  Our levain provides the leavening power for our breads as well as a great deal of flavor!  Levain also acts as a natural preservative so you will find that our breads easily keep for five days.  We leave them naked on the cutting board (cut side down) for three days.  Following that (if there is any bread left!) we transfer it to a plastic bag.  Two of our breads (Oceana Round, O’Batta) are made using a yeasted starter called a poolish.  This pre-ferment contains about one teaspoon of commercial yeast for every 25 loaves!  So while it is a very small amount of yeast in these loaves, we do find that it affects their keeping capacity.  Our breads take an average of 20 hours to develop from start to finish.

Handcrafted: All of our breads are made by hand!  The only mechanized part of our process is the initial phase of mixing which takes place in our Hobart mixer.  Even during this initial mixing process we are continually feeling the doughs to check that they are developing appropriately.  Once our doughs come off of the mixer they are touched by our hands during multiple foldings, shapings, and in the oven loading process.  Presently all of our breads are free-standing hearth loaves—this means, each one is shaped either by Charlie or Hilde, or by both of us (our loaves go through two shaping processes).

Baked in a wood-fired brick oven: Undoubtedly, our wood-fired brick oven steals the show in our bakery.  Constructed by Charlie, it is made of nearly 15,000 pounds of masonry and is heated to nearly 1000 degrees (farenheit) before we load it up on a bake day.  The oven-firing process begins 24 hours before we even place the first loaves in to bake.  We slowly feed the fire and bring it up to 1000 degrees over the course of 12 hours.  For the next 12 hours we let the fire burn down to ashes and then rake out the ashes just few minutes before loading our first loaves.  This masonry stove provides very powerful, radiant heat that quickly penetrates the loaves placed inside.  This intense heat contributes to an unbelievable crust flavored with the carmelized sugars (starches) from the wheat itself.  Our first ovenloads can be in and out of the oven in as quickly as 12 minutes—the heat is that intense!

Michigan’s only 100% solar-powered bakery: The fact that our mixer, our fridge, and our lights are powered by the sun doesn’t change the flavor of our bread—but we sure appreciate all the energy that our panels gather for us that makes the whole process possible!  We have six panels that power both our home and our bakery and we are living proof that solar electric systems can work in Michigan!

West Michigan Wheat: An everyday, light wheat bread with a creamy flavor and the subtle sweetness of Michigan red spring wheat.  An incredibly versatile loaf, this bread is equally great for French toast, grilled cheese sandwiches, or the old standby—peanut butter and jam.  $5.00 a loaf.  Organic wheat flour, organic Michigan-grown whole wheat flour, water, sea salt, malted barley flour.

Finn’s Pecan Raisin Pecan:  We are raisin’ our son Finn on Pecan Raisin Pecan…a bread so rich you won’t believe it’s not cake!  No sweeteners added—just a quarter pound each of pecans and raisins in every loaf.  Who needs butter?  Simply amazing.  And yes, this is Finn’s favorite.  $7.75 a loaf.

F.P.R.P. INGREDIENTS: organic wheat flour, organic Michigan-grown whole wheat flour, water, organic raisins, pecans, sea salt, malted barley flour.

Griff’s 8-Grain:  A hearty 8-grain, 3-seed bread named for our big-hearted neighbor Jim Griffin.  This rich, chewy loaf is made with all organic grains and is sweetened with just a touch of West Michigan honey. Try it as fuel for your next sojourn or, enjoy it as we do, as unparalleled toast.  $6.50 a loaf.

G.8.G. INGREDIENTS:  organic sifted wheat flour*, organic wheat flour, organic whole wheat flour*, organic cornmeal*, organic millet, organic buckwheat groats, organic steel-cut oats, organic cracked wheat*, organic cracked rye*, organic cracked barley*, organic cracked spelt*, water, Michigan honey, organic sunflower seeds, organic sesame seeds, blue poppy seeds, salt.  *Michigan-grown grains.

Elbridge Parmesan Olive:  The cheese does not stand alone in this loaf!  Generous hunks of mouth-watering parmesan and glorious Kalamata olives in every bite—this sumptuous boule is not for the faint of heart.  We recommend sharing it with a loved one—lest you eat the entire loaf by yourself in one sitting!  It is that good.  $8.00 a round.

SWEETWATER LOCAL FOODS MARKET CELEBRATES

NATIONAL FARMERS MARKET WEEK

United States Secretary of Agriculture Tom Vilsack has proclaimed August 1-7, 2010 as National Farmers Market Week.

This year marks the 11th annual National Farmers Market Week.  Since the USDA began declaring National Farmers Market Week in 2000, the number of farmers markets has almost doubled, from 2,863 markets in 2000 to 5,274 in 2009.

According to the USDA, Sweetwater Local Foods Market is one of the approximately 6,000 in the country operating in 2010, of the more than 220 in Michigan. The Sweetwater Local Foods Market began in 2005, and currently has 16 farmers selling a wide variety of products at the area’s only year-round farmers market, including Certified Organic blueberries, Certified Naturally Grown pastured poultry, pork, & beef, organic baked goods, goat & cow cheeses, and so much more! The market was one of a small handful to accept SNAP/EBT Bridge Cards back in 2006, along with Project Fresh Coupons. Vendors also regularly donate to area food banks.

“Farmers markets are good for you for health, good for your community, and good for the economy” says Stacy Miller, Executive Director of the Farmers Market Coalition, a nonprofit supporting farmers markets across the country.  “During Farmers Market Week, we invite everyone to celebrate the freshest foods from America’s most entrepreneurial farmers by supporting their local farmers markets.”

.Other facts about farmers markets:

  • California, New York, Iowa, Illinois, Pennsylvania, Wisconsin, Michigan, Massachusetts, Ohio, and Kentucky are the states with the most farmers markets.
  • The USDA estimates that farmers markets provide income opportunities for at least 150,000 direct-marketing farmers and food producers across the country.
  • More than 870 markets operate nationwide between November and May in 2009, a time often considered ‘off season.’  This number is growing rapidly.
  • It’s estimated that approximately $1.3 billion in direct farm-to-consumer sales occurred in farmers markets in 2009.
  • Farmers markets accepted over $44 million in WIC (Women, Infant and Children) and SFNP (Senior Farmers Market Nutrition Program) vouchers in 2009 – making fresh food available to millions of low income families.
  • More than 1,000 farmers markets are estimated to accept Supplemental Nutrition Assistance Program benefits in 2010.  Between 2008 and 2009, the amount of SNAP dollars redeemed at farmers markets increased more than 100%.
  • Farmers at farmers markets donate hundreds of thousands of pounds of fresh produce to local social service agencies across the country each year.

Maple Moon Farm is a young family farm that is rooted in the idea that our health is interconnected with the health of our soil, our plants, and our animals.  We do our best to support the health of all through sustainable practices and lots of love.  We are so excited that our farm has grown to the point that we can share this food with the community.   Mike has been helping to provide the community with nutritious food through his work at the Bobier’s.  He has worked on their farm for three years, gleaning information and skills.  Amanda’s other contributions to the health of the community include wildcrafting plants and making medicinal preparations, and her deep passion is serving families as a midwife.  Amanda is a student midwife finishing her training as a CPM, training with Patrice. (We thank the Bobier’s for passing on all their skills.)

Our family also includes our children Zen Maple and Sova Moon, who embody love and excitement for life.  They are also great pea pickers! We look forward to sharing our products with others and hope they enjoy them as much as we have enjoyed growing and creating them.
