Our freedom ranger chickens will be available next week and later!  While not a heritage bird, our hope is that they will be a tasty bird with qualities like heritage birds on a larger frame.  In our experience the heritage had more dark meat, more flavor, greater texture.  All great things!
Our chickens are raised on grass and alfalfa pasture.  They get lots of sunshine and wind, leftover veggies, and non-gmo feed.

Stuart Family Organics of Custer
Jim Stuart, founder and CEO of Stuart Family Organics, grew up on his parents’ farm eighteen miles southeast of Ludington, Michigan.  For over 25 years he has made his own bread and other baked goods from his own hard red wheat, working at farming mainly during the summers, teaching English in Scottville, Michigan during the rest of the year.
Now retired from teaching, Jim’s farming is certified organic and his children, Meranda, Wesley and Kyle (all in their twenties), have returned home to help with the farm and selling products at farmers’ markets.  These products include the Powerhouse Muffins, several variations of tofu cookies, which usually surprise customers with their tastiness, oatmeal chocolate chip cookies, hard red whole wheat flour, and the wheat grain or berries from which the flour is grown.
Products at this week’s market include:

Freshly-ground corn meal – 2# bagsWe took our whole corn down to Windmill Island in Holland and had them grind corn meal for us. This stoneground meal is fresh, fresh, fresh–what I will have along to market Saturday is the third batch!

I’ve been snatching a few moments here and there over the last few months to weave. This week I’ll bring some traditional rag rugs that I’ve made on my floor loom. Two of my favorite materials to work with are recycled denim and corduroy. Something new, useful and beautiful made from something old.

In the roaster this week:
Featured Coffee of the Week! Ethiopia Amaro Gayo Org. – A deliciously fruity light roast, this coffee has notes of strawberry and brown sugar. The aroma reminds me of fresh strawberry pie! This coffee is grown, harvested, processed, and exported by Ethiopia’s only female miller/exporter Asnakech Thomas. She is dedicated to improving the quality of life of women and children in the area, and is working toward building a hospital. She is also dedicated to producing the highest quality organic coffee. Check out our facebook page to learn more about this coffee, and learn about our Coffee of the Week program.
Colombia FTO – Slightly bitter, but with a nice balance of sweetness, this coffee has notes of toasted marshmallow and roasted nuts. We are roasting this to a medium-dark level, for those who like a little edge to the cup.
Guatemala FTO – A deliciously sweet, low acid coffee with milk chocolate and caramel notes, and a full body. Roasted to a medium level, this coffee is great with or without milk.
Papua New Guinea FTO – Low acid, with notes of caramel and nuts. A good, strong medium-dark roast.
Decaffeinated Peru FTO – rich and sweet, with chocolate and caramel notes. A very delicious decaf! This coffee was decaffeinated using the Mountain Water Process. It is a natural, chemical free process which allows the bean to retain much of its unique flavor.
Come taste the fresh difference!
Coffee is seasonal, so expect some variety. We try not to roast too much extra in order to keep the coffee fresh every week.
Call or text (231)742-0229 or email titus@theroaringmouse.com to order in advance, and we will have it bagged up and ready for you. Advance orders will ensure that we don’t run out of your favorite coffee before you get some!
