This Saturday I will have along the following heirloom, certified organic beans:
Arikara Yellow – Intense flavor, hold shape well, baked beans, soups
Bean Medley – Random mixture of our beans, good for soup
Black Calypso – Slight potato flavor, crumbly texture, good for soups & salads
Black Turtle – Common black bean, great in Mexican dishes (not an heirloom)
Dapple Grey – Hold shape well, meaty texture, deep flavor, great for soup
Hidatsa Red  – Slight nutty taste, good for soup/chili or red beans & rice
Hutterite Soup  – Comfort food, cook fast, creamy soup, baby food
Jacob’s Cattle  – Big & meaty, taste like potatoes, traditional baked beans, chili (nearly gone!)
Painted Lady – Slightly sweet bean, smooth, creamy texture, good all-purpose bean
Pinto – Earthy flavor, great in Mexican cooking, fall apart under long cooking (not an heirloom)
Spanish Tolosana – Rich & creamy, hold shape well, good for chili, bean salads
Tiger Eye  – Creamy smooth texture, rich flavor, tender skin, good all-purpose bean
Valentine  – An upgrade from kidney beans, great for salads, soups & dips
Yellow Indian Woman  – Mild, creamy tasting, sturdy, salads or chili
Zebra  – Smooth, creamy texture, full-bodied flavor, good all-purpose bean
Please email me ahead of time if you need bulk amounts of any of these (2# or 5#).
I will be bringing along wool socks made from our sheeps’ wool. We have grass-fed, 
chemical-free lamb available by the half or the whole. Email me for more information.

Little Farm in the Big Woods of Whitehall
We will be back at market this week with quite a few EGGS from our organically fed chickens. They are enjoying life in their winter hoophouse pen and are continuing to lay very well. We soak their feed for optimal nutrition, as well as feeding them scraps from our kitchen. We look forward to seeing you on Saturday.
