BEEF: Liver, heart, cubed steak, ground beef, ground beef in 10# quantities (8 packages) for $35.00. These steers were fed some homegrown grain with their homegrown hay last winter, and were on lush rotational pastures all summer. Cows can eat grain as long as they are on pasture or hay free-range. They balance their own diets when given variety to choose. We will have a new batch of beef, all cuts at the next Market Day. We also have some quarters of beef for sale. These steers were fed some homegrown grain with their homegrown hay last winter, and were on lush rotational pastures all summer. Cows can eat grain as long as they are on pasture or hay free-range. They balance their own diets when given variety to choose from. SALE! Beef liver and Swiss (Cubed) Steak 50¢ off per pound.

Russets are the standard baking potato- high in starch and low in moisture, so they bake well and yield light, fluffy mashed potatoes. They don’t hold their shape after cooking, so don’t use them to make potato salads or scalloped potatoes. We also have Russian fingerlings ~ buff brown skin / white flesh.

We are sending out an extra notice this week about a change in our days of operation. Our last market of 2009 is this Saturday, December the 19th. We will then be closed for the next two Saturdays, on the 26th & Jan 2nd, and will reopen on January 9th.

Market Calendar Dec – May:
We will be open this Saturday, December 19th from 9-1.
We will be closed the day after Christmas, Dec. 26th.
We will be closed the day after New Years, Jan. 2nd.
We will be open January 9th, 9-1 and every other Saturday thereafter until end of May.
Market days in January: Saturday the 9th, Saturday the 23rd.
Market days in February: Saturday the 6th, Saturday the 20th.
Market days in March: Saturday the 6th, Saturday the 20th.
Market days in April: Saturday the 3rd, Saturday the 17th.

Meet the Hendrians! This is the official introduction of Will Hendrian & Hickory Ridge Family Farm. Four years ago living on 10 acres further north Will became interested in raising pastured poultry after having read Joel Salatin’s book You Can Farm. He and his father eventually traveled to the Polyface Farm in the Shenandoah Valley to visit with Salatin and see his operation for themselves. Will was convinced it was what he wanted to do; the only problem was their 10 acres was in an area of encroaching suburbs, who didn’t want a chicken farm in their midst. Moving to the Hart area just a year ago, Will jumped right in, apprenticing to the Happy Hill Farm as well as working with Bill & Patrice Bobier at Earthscape Farm. The transition of the successful poultry business begun by Gayle & Emma Filbrun of Happy Hill to the Hickory Ridge Farm has gone very smoothly, mostly because of Will’s hard work and determination, but also because of his hugely supportive family, most of whom you will probably meet at the market from time to time. The following meats are available right now:
