Our thanks to all of you who went to Sweetwater last weekend to purchase our products.  As folks who appreciate great sandwiches, this time of year is always special to us as the tomatoes,

eggplants, and cucumbers are plentiful.  So enjoy the creative possibilities of the season!

Here is a little more “sourdough” 101 touting the benefits of fermented foods.

Sourdough bread preparation improves nutrition by:

-pre-digesting starches, making the bread more easily digestible

-lowering insulin response/improving glucose tolerance

-protecting Vitamin B1 from the damage of the heat of baking

-breaking down gluten, which may result in a bread that gluten-sensitive people can eat

-activating phytase to hydrolyze (dissolve) the phytates, thus freeing up minerals such as zinc, iron, magnesium, copper & phophorous.

We now make a 100 percent whole grain loaf from Kamut flour.  Kamut is a non hybridized relative of durum wheat that is said to have originated in ancient Egypt.  It results in a surprisingly light loaf with a moist texture and fruity flavor.  While it does contain the proteins that develop gluten, it is a great alternative for folks with wheat sensitivities.

“ DO YOU MAKE ANY SOURDOUGH BREADS?”  We’ve had a number of customers ask us this question recently as more and more people become aware of the nutritional superiority of a “sourdough” bread versus a yeasted bread (a bread leavened with commercial yeast).  The answer to that question is YES WE DO!!  Fourteen of the fifteen breads we make are “sourdoughs”, that is, the starter that we cultivate to rise and flavor our breads is a sourdough starter.  (The Oceana Round is the only exception—it is made with a yeasted starter called a poolish).  The sourdough starter that we use is called a levain.  We cultivate our levain right here in our bakery using only organic flour and water.  This mixture captures wild yeast from the air and uses the wild yeast found on the grains themselves.  Sourdough starters harness the fermentation power of wild yeasts to leaven and flavor breads.

Our breads undergo a period fermentation lasting anywhere from 6 to 18 hours.  This extended fermentation renders the grains (and the gluten) far more digestible than your standard yeasted bread.  The whole thrust of commercial yeast is to speed up fermentation, while naturally-leavened breads slow down fermentation and increase digestibility (the grains are essentially pre-digested through the fermentation process).

Some customers are surprised to learn that our breads are “sourdough” because they don’t taste especially sour.  Our goal is to make breads that are full-flavored and nuanced—we want you to taste the sweetness and complexity of the grains themselves.  We are able to accomplish this through precise fermentation practices that include a long, cold fermentation in a refrigerator.

We are proud to carry on the tradition of baking naturally-leavened breads as artisan bakers have for generations.  Enjoy the breads!!

Tim will be back at the market.  He took a little break to compete in

a sheep shearing competition in West Branch Michigan.  He placed 3rd.

in his division.  Considering, he had the least experience out of

anyone there, he was quite pleased with his placing.  Most of the

shearers there have sheared thousands of sheep.  Tim has not quite

reached 1000!

Creamy Garlic, Parsley & Feta Dressing

1/3 C Earthscape Farms parsley, chopped

1/4 C water

1-3 Funny Farm garlic cloves, chopped

2/3 C plain organic yogurt (Greek if available)

2/3 C XV Organic Olive Oil

1/4 C fresh organic lemon juice (Meijer’s has some beautiful organic lemons!)

1oz (3 TBS) Dancing Goat Creamery feta cheese, crumbled.

Puree parsley, water, and garlic until smooth. Add remaining ingredients, blend until just combined. Chill at least 30 minutes and up to a week.

Funny Farm of Grant

We’ll be at market with MELONS (yellow flesh, seedless and large reds), pickles, cukes,  kales,  garlic,  potatoes, basil, scallions, summer squash, okra, and kohlrabi.

 

If you’ve never tried this vegetable, here are a few ways we like to use Kohlrabi:

Hash Brown Kohlrabi

Peel outer skin down to white flesh. Grate same as a potato. In a medium fry pan, add 1/4 to 1/2 c water depending on amount of vegetable used. Cover and let steam just until tender. Remove cover, lift shredded veg with spatula and add butter . Fry until desired crispiness is reached.  Yum!

Kohlrabi Slaw

Kohlrabi can be used in place of its stronger tasting cabbage cousin for a great Veggie Slaw!

HAVE YOU TRIED OUR GRANOLA LATELY?  Choose from: Mountain Crunch Granola (pure vanilla, toasted almonds, and organic coconut oil) and Laughing Tree Peanut Butter Granola (all-natural PB, pure vanilla, and Michigan honey).

Baked in our wood-fired brick oven several days after the intense bread-baking heat has dissipated.  This ensures that the nutrients in the grains and seeds remain intact!  Please note, these granolas are SWEETENED ONLY WITH MICHIGAN HONEY!  There is absolutely no refined sugar in them.  They are both wonderful with milk or yogurt or as part of a trail mix.  Our children love them!  We often have samples of each variety available at market—come have a taste!

Wind Dancer Farms of West Olive

Wind Dancer Farms is a second generation family farm located in the heart of farm country in the Grand Haven area. Richard and Judy Rant began farming 30 years ago. When Richard passed away  son RJ got involved and began to turn the farm towards organic farming methods. The blueberry production was certified organic in 2010. Today, daughter Megan Wilson has also gotten involved, helping to bring the berries to market. Says Megan, “We decided to become organic when we recognized that for us to be healthy, we knew we needed to grow healthy, strong plants.  When you feed beneficial food to your soil, the soil then feeds the plants healthy food and the plants produce nutrient enriched blueberries for people to eat. ” We couldn’t agree more, Megan!

We’ll be at market with pickles, cukes,  kales,  garlic,  potatoes, basil, scallions, summer squash, and okra!

 

Shady Side Farm of Holland

Mike from Shady Side Farm will be at market Saturday with certified organic black turtle and pinto beans. Here’s a great summer salad that uses black beans:

 

Mediterranean Black Bean Salad

3-4 cups black beans (cooked previously)*

1/2 cup sliced green onions

1 large tomato, seeded and diced

1 stalk celery, diced

1/2 cup cilantro, chopped

1 Tbsp. fresh mint, chopped (or 1 tsp. dried mint)

1/4 cup lemon juice

1/4 cup olive oil

a dash of Tabasco sauce

1 tsp. cumin

salt and pepper to taste

Drain and rinse black beans. Combine all ingredients in a bowl, refrigerating for at least 1 hour (better if left overnight) to combine flavors.

*Soak black beans overnight. The next day, cook in heavy pot for about two hours, or until tender. Midway through cooking, add onion, garlic, salt, and black pepper to taste. Best idea: soak/cook a large quantity of beans and freeze with liquid in 1 or 2 cup batches for use when a recipe calls for canned beans.

Mike will also have his wool products along–felting kits, roving for felting or spinning, yarn, dryer balls, socks and handwoven rag rugs.

HAVE YOU TRIED OUR GRANOLA LATELY?  We make two different varieties of granola: Mountain Crunch Granola (pure vanilla, toasted almonds, and organic coconut oil) and Laughing Tree Peanut Butter Granola (all-natural PB, pure vanilla, and Michigan honey).

Both of these granolas are baked in our wood-fired brick oven after the intense bread-baking heat has dissipated (after several days).  They are baked at a low temperature to ensure that the nutrients in the grains and seeds remain intact!  Please note, these granolas are SWEETENED ONLY WITH MICHIGAN HONEY!  There is absolutely no refined sugar in them.  They are both wonderful with milk or yogurt or as part of a trail mix.  Our children love them!  We often have samples of each variety available at market—come have a taste!
