Cabbage – red, smooth green, and Savoy.  Potatoes ~ Red Norland, White (Kennebec, Russet, Bintje, Augusta).  We have really nice ones and some seconds. Garlic.

Eggs ~ our own, and we will be selling Nic and Carolyn’s (Crow Feather Farm) eggs, too.

The BOBIER BEEF Story ~  Our steers and cows were born on our Farm, as were their great-great-great Grandmothers.  We’ve been doing rotational pastures since the 70’s.  We only buy bulls for breeding, and they come from reputable farmers in Michigan.  Our cows raise their own calves until they are weaned at about 9 months.  We raise our own hay, plus what we buy comes from our own neighborhood so we know how it was grown. Our cattle have access to 3-5 acre yards through the winter, with some barn access, fresh water, bedding straw, and all the hay they can eat.  The steers get minimal amounts of homegrown and ground grain during the colder months (like Dessert!).  We think this makes our beef tasty and tender, with all the benefits of grass-fed beef, too!

Shady Side Farm of Holland

Mike of Shady Side Farm will be at market again this week with his wool products and certified organic beans. It’s maple syrup season, and so we’ll feature the Jacob’s Cattle Beans as our Special of the Week. This week the 2-lb. bags will be available for $10, regularly $11.50. Jacob’s Cattle Beans are an heirloom from Prince Edward Island, and are on the Slow Food USA Ark of Taste list. Here is a recipe that uses both maple syrup and Jacob’s Cattle Beans:

 

Maple Baked Beans

1 pound Pinto or Jacob’s Cattle beans

1 large onion chopped

2 cloves garlic, minced

1 bay leaf

3 glugs of maple syrup (about 1/2 cup)

3/4-pound chunk of bacon

1/2 teaspoon salt

2 teaspoons dry mustard

 

The night before, pick over beans, cover generously with cold water, and set aside. The next morning, drain water, and add fresh water to the beans. Bring beans to boil. Reduce heat and simmer until tender–about 2 hours. Drain beans; put in slow cooker on high. Add onion, garlic, bay leaf and chopped bacon. Add maple syrup and enough cold water to cover beans. Stir beans from time to time and add a bit of hot water if necessary to keep the top layer just nicely submerged. Mid afternoon, stir in salt and dry mustard. Remove the lid for the last hour of cooking so the beans thicken.

NEW!! We are busy at the farm boiling for 1400 taps! Tate Luchies will be bringing the first of the 2013 Maple Syrup this Saturday, and he will also have order forms on hand if you want to place an order for Grade B Maple Syrup -first come first served.  Grade B is wonderful for health drinks (most of us agree that it contains more minerals), excellent for cooking/baking (richer in flavor, see recipe above), and some people like it better in that it can “go a little further” as most people use less of it due to the slightly richer flavor. We are anticipating a great year!

 

Laughing Tree Brick Oven Bakery of Hart

We’re reintroducing an old friend with a new twist.  We’re baking the Hazel Road Rustic again.  We’ve based it on an a loaf said to have its origins in New England called Anadama, or ‘friendship’ bread.  A touch of molasses and ample amounts of Michigan grown cracked corn coupled with a hint of rye give this loaf a slight buttery flavor and great texture.

For those who have asked, a somewhat scientific definition of natural leaven:
Wild yeast, or multi-micro flora are the natural air-borne ferments that are generated or seeded in a dough left exposed to a clean and cool atmosphere under specific conditions of moisture and temperature and the exclusion of larger specimen. Within that fertile medium, lactic bacteria of the various beneficial types are found: B. Pastorianum, B. Delbrucki, B.Ternoas well as saccharomyces such as S.Pastorianus, and S. Cervisiae. This type of microflora consumes little energy and multiplies quite slowly. Its growth duplicates the cycle of human breathing and that of wheat embryo germination. Wild yeast also naturally enriches the bread, due to an additional development of nutrients by the beneficial enzymes and ferments.

Both of these granolas are baked in our wood-fired brick oven after the intense bread-baking heat has dissipated (after several days).  They are baked at a low temperature to ensure that the nutrients in the grains and seeds remain intact!  Please note, these granolas are SWEETENED ONLY WITH MICHIGAN HONEY!  There is absolutely no refined sugar in them.

Mike from Shady Side Farm will be at Saturday’s market with his certified organic dry beans. He will also have wool socks and mittens along for those who have cold feet and hands. He’ll also have along a few Needle Felting Starter Kits. These kits include almost everything you need to get started with the popular art of needle felting. Just add video tutorials (available on YouTube) and bandaids. This week’s bean special will be 2-lb. bags of October Beans. October Beans are a member of the Cranberry Bean family, and have a slightly sweet, nutty flavor. This week they will be available for $10, regularly $11.50.

 

Maple Moon Farm of Shelby

We dug carrots yesterday and we were very excited to touch soil again.  Winter carrots are so sweet and are our favorite carrots.  We have 1# and 5# bags available. (Check out pictures of the harvest on our FB page )

The hoop has been staying cold and not much is growing, so we are doubtful of having greens this week.  The February days are growing longer, and more sun and rising temperatures means lots of growth is just around the corner.  The time of abundance is coming soon!

Our potatoes continue to store well.  We have Red La Soda in abundance, and the last of our All Blue and German Butterball.

Amanda’s Herbals: We burn wood for heat, and it makes for dry air in the house.  We keep ourselves well hydrated (and healthy!) with our herbal teas.  We also use our creams to keep our skin moist and protected.  Our herbal products contribute to health in all seasons.  We have salves, creams, lip balms, and teas.

VEGGIES Butternut WINTER SQUASH (they are keeping very well!).  Cabbage – red, smooth green, and Savoy.  Potatoes ~ Red Norland, White (Kennebec, Russet, Bintje, Augusta) and Fingerling Potatoes.  We have really nice ones and some seconds.

Eggs ~ our own, and we will be selling Nic and Carolyn’s (Crow Feather Farm) eggs, too.

The BOBIER BEEF Story ~  Our steers and cows were born on our Farm, as were their great-great-great Grandmothers.  We’ve been doing rotational pastures since the 70’s.  We only buy bulls for breeding, and they come from reputable farmers in Michigan.  Our cows raise their own calves until they are weaned at about 9 months.  We raise our own hay, plus what we buy comes from our own neighborhood so we know how it was grown. Our cattle have access to 3-5 acre yards through the winter, with some barn access, fresh water, bedding straw, and all the hay they can eat.  The steers get minimal amounts of homegrown and ground grain during the colder months (like Dessert!).  We think this makes our beef tasty and tender, with all the benefits of grass-fed beef, too!

Mike and Lona from Shady Side Farm will be at Sweetwater this Saturday. They will have their certified organic beans available for purchase. Stock up for these long winter days–beans are serious comfort food! They’ll also have rugs, socks and other wool products for sale. Mike will take along his antique sock knitting machine to demonstrate how he makes socks. Stop by and say hi. We will be at market on Saturday with our Mulefoot pork and 100% Shetland yarn for sale.   This may be the last time to try some of our non-GMO, pastured, heritage pork from our Mulefoot hogs until March when we have more pork processed.   We have sold out of some cuts but we still have the following delicious offerings:
Bacon – naturally cured, nitrate/nitrite free
Smoked Hocks – also naturally cured, these are an excellent choice for bean and pea soups, baked beans, and anything else you want to add a wonderful smoky flavor to.   Heavenly in Senate Bean Soup!
Smoked Soup Bones – these also add wonderful flavor to soup but don’t have any meat or fat on them like the hocks
Andouille Sausage Links – a tasty Cajun sausage with a rich, hearty flavor and a little kick; traditional for gumbo, they are also great on the grill or in just about anything you can think of.   My favorite…

PRODUCT INFORMATION

BREADS: Each week we bake our seven scrumptious weekly breads (listed below) as well as one or more specialty breads.  Please consult the schedule below to find out when we are making your favorite specialty bread!

PASTRIES:  Each week we bake 3-4 varieties of our fabulous cream scones (posted weekly) as well as 1-2 varieties of decadent dark chocolate brownies (also posted weekly).

HAVE YOU TRIED OUR GRANOLA LATELY?  We make two different varieties of granola: Mountain Crunch Granola (pure vanilla, toasted almonds, and organic coconut oil) and Laughing Tree Peanut Butter Granola (all-natural PB, pure vanilla, and Michigan honey).

Both of these granolas are baked in our wood-fired brick oven after the intense bread-baking heat has dissipated (after several days).  They are baked at a low temperature to ensure that the nutrients in the grains and seeds remain intact!  Please note, these granolas are SWEETENED ONLY WITH MICHIGAN HONEY!  There is absolutely no refined sugar in them.  They are both wonderful with milk or yogurt or as part of a trail mix.  Our children love them!  We often have samples of each variety available at market—come have a taste!

We’ve concluded that this is our favorite time or year, at least one member of clan Muller, the writer of these notes has.  While I have great respect for my farming friends, whose work is most noble, I am grateful to spend my days in front of a warm oven rather than in the driving, wind-blown rain in the middle of a field.  Market also tends to be a little more relaxed, which lends itself to a little more chatting than in the summertime.

We’ve decided to bake our Yule time Stollen this week and are encouraging people to pre-order them for market or for at stores as the quantity we can bake is limited.  We’d appreciate having orders for these tasty fruit breads by Tuesday evening if it all possible.  Along with Stollen, we will bake Cranberry Orange Almond to celebrate the festive vibe of the season.  Our continued thanks to you, fine citizens of the great mitten that is our state, for supporting our little business and enjoying our work!

We’ve concluded that this is our favorite time or year, at least one member of clan Muller, the writer of these notes has.  While I have great respect for my farming friends, whose work is most noble, I am grateful to spend my days in front of a warm oven rather than in the driving, wind-blown rain in the middle of a field.  Market also tends to be a little more relaxed, which lends itself to a little more chatting than in the summertime.

We’ve decided to bake our Yule time Stollen this week and are encouraging people to pre-order them for market or for at stores as the quantity we can bake is limited.  We’d appreciate having orders for these tasty fruit breads by Tuesday evening if it all possible.  Along with Stollen, we will bake Cranberry Orange Almond, and Pain au Chocolate, to celebrate the festive vibe of the season.  Our continued thanks to you, fine citizens of the great mitten that is our state, for supporting our little business and enjoying our work!

GRANOLAs

Mountain Crunch Granola (pure vanilla, toasted almonds, and organic coconut oil) and Laughing Tree Peanut Butter Granola (all-natural PB, pure vanilla, and Michigan honey).

Both of these granolas are baked in our wood-fired brick oven after the intense bread-baking heat has dissipated (after several days).  They are baked at a low temperature to ensure that the nutrients in the grains and seeds remain intact!  Please note, these granolas are SWEETENED ONLY WITH MICHIGAN HONEY!  There is absolutely no refined sugar in them.

We’ve concluded that this is our favorite time or year, at least one member of clan Muller, the writer of these notes has.  While I have great respect for my farming friends, whose work is most noble, I am grateful to spend my days in front of a warm oven rather than in the driving, wind-blown rain in the middle of a field.  Market also tends to be a little more relaxed, which lends itself to a little more chatting than in the summertime.

We’ve decided to bake our Yule time Stollen this week and are encouraging people to pre-order them for market or for at stores as the quantity we can bake is limited.  We’d appreciate having orders for these tasty fruit breads by Tuesday evening if it all possible.  Along with Stollen, we will bake Cranberry Orange Almond, and Pain au Chocolate, to celebrate the festive vibe of the season.  Our continued thanks to you, fine citizens of the great mitten that is our state, for supporting our little business and enjoying our work!

GRANOLAs

Mountain Crunch Granola (pure vanilla, toasted almonds, and organic coconut oil) and Laughing Tree Peanut Butter Granola (all-natural PB, pure vanilla, and Michigan honey).

Both of these granolas are baked in our wood-fired brick oven after the intense bread-baking heat has dissipated (after several days).  They are baked at a low temperature to ensure that the nutrients in the grains and seeds remain intact!  Please note, these granolas are SWEETENED ONLY WITH MICHIGAN HONEY!  There is absolutely no refined sugar in them.
