It’s almost the end of February, another cold weekend coming up, time for meaty hot stews with a side of great crusty bread. The Pasturage has more lamb in stock. Earthscape & Pine Row have great cuts of beef available. Scholl has chickens. Laughing Tree has a few extra loaves of great crusty bread available for walk ups. You still have time to get your preorders in, or add to an existing one and in these coldest months, preorders are essential to keep the market running.

Microgreens:
A reminder that I have shifted my microgreen packaging from single use clamshells to reusable glass mason jars. Jars have a $1 deposit that will be returned with the return of the jar. Cheers to fresh, clean, local, and green!
All microgreens are $5 a jar + the $1 deposit
These weeks microgreen varieties include:
·       Pea Shoots – A tender yet crunchy micro that has a sweet pea flavor – great to add to sandwiches, stir frys and salads
·       Sunflower Shoots – A tender yet crunchy micro with a nutty flavor – I enjoy these on just about everything! I love topping them on eggs or a hearty soup!
·       Jazzy Mix – This is a colorful mix with a kick! A nice blend of mild greens with a kick of radish. These are a versatile micro that will give your meal some jazzy summer vibes on these chilly winter days!
·       Asian Blend – This is a zippy blend of tender asian microgreens mixed in with mustard micros. I enjoy these mixed into an orriental salad, or mixed into my morning eggs.
·       Woven’s Mellow Mix – A mix of mellow, yet hearty tender greens. These are great in smoothies, salads, or to top off your meal. I enjoy this mix when I am feeling the need for a little extra “green” on my plate
CSA –
CSA shares are filling up quick! If you are looking for an abundance of fresh veggies (and/or flowers) all season long, consider purchasing a share from the farm this season! This season, the farm is offering a few different options. I am offering a traditional 10 or 20 week CSA for veggies, a 5 or 10 week CSA for flowers, and a flexible CSA option, using market cards. The farm is relying heavily on early season CSA purchases this year, as I move the farm to a permanent location, and build up new infrastructure. This year’s CSA purchases will go toward necessary infrastructure including: running electricity to the property, building out a greenhouse, installing irrigation, building out a cooler + wash pack, as well as paying for necessary costs such as compost + seeds.

1. Look over the list. Each vendor has a unique deadline for when they need to receive your pre-order depending on their product. Send your pre-order by email to each vendor you want to order from, within their required deadlines.
2. Vendors will respond back by no later than Friday before market day with an order confirmation and an invoice that in most cases will allow you to pre-pay for your order. If a vendor is not set up to take payment online they will accept checks (preferred) or cash in a sealed envelope on market day pickup.

Another bone broth use: savory porridge. This is perfect in the winter. A steaming bowl of porridge complete with spices like cumin, thyme, turmeric, and cayenne with carrots and collards in it and a fried egg on top is my definition of February heaven. My favorite grain to use for porridge is semolina. Its texture is perfect lending a truly creamy porridge. You can also use grits, polenta, oatmeal, kernza, bulgur wheat or even a box of good ol’ cream of wheat (aka farina). Just replace the water with broth. Experiment!

2. Vendors will respond back by no later than Friday before market day with an order confirmation and an invoice that in most cases will allow you to pre-pay for your order. If a vendor is not set up to take payment online they will accept checks (preferred) or cash in a sealed envelope on market day pickup.

Microgreens are back!
I am hoping to shift to some eco-friendly packaging in the New Year! Keeping the Earth clean and reducing single use plastics is a big goal on the farm.
To help support this goal, I will be shifting my microgreen packaging to pint sized canning jars with cheese cloth covering the lid, rather than the single use plastic clam shells. These jars will have a $1 deposit on them – the deposit will be returned when you return the jar. All jars will be regularly washed and sanitized before use. You are also welcome to bring your own container if you don’t wish to pay a deposit 🙂
All microgreens are $5 a jar + the $1 deposit

·       Pea Shoots – A tender yet crunchy micro that has a sweet pea flavor – great to add to sandwiches, stir frys and salads

·       Chinese watercress – This is one of my very favorite microgreens! – It has a peppery kick to it and is amazing in stir fry. I also enjoy topping these on my morning eggs!

Here’s the trifecta of bone broth: sip, soup, stew. Beyond that, what else is there? Oh, the worlds that await you! You know how good greens are for you, right? Every time I cook greens, I throw in a few frozen cubes of bone broth. When you make your broth, pour a quart or so into an ice cube tray, or dixie cups, or muffin tins, whatever you have. Once frozen, let them sit on the counter for 10 minutes or so, then pop into a freezer baggie and voila! You have instant flavor, nutrition, and pan-protecting juice that steams the greens while not burning them or adding more oil. I know the dish is done when the broth has reduced to practically nothing and the greens are succulent and delicious!

2. Vendors will respond back by no later than Friday before market day with an order confirmation and an invoice that in most cases will allow you to pre-pay for your order. If a vendor is not set up to take payment online they will accept checks (preferred) or cash in a sealed envelope on market day pickup.

2. Vendors will respond back by no later than Friday before market day with an order confirmation and an invoice that in most cases will allow you to pre-pay for your order. If a vendor is not set up to take payment online they will accept checks (preferred) or cash in a sealed envelope on market day pickup.

This weekend! Get a bag of bones with every purchase! Pork neck bones, that is, complete with two recipes: one for bone broth and one from my Aunt who is Polish for neck bones and sauerkraut. The slaughterhouse didn’t vacuum pack them, so please help me in not letting them go to waste! Other ways to use them include a brief steam or boil, then taking the meat off the bones and making tacos, pulled pork sandwiches, you name it. Or using them as the base for pozole. If nothing else, your dog will love the raw treat.

2. Vendors will respond back by no later than Friday before market day with an order confirmation and an invoice that in most cases will allow you to pre-pay for your order. If a vendor is not set up to take payment online they will accept checks (preferred) or cash in a sealed envelope on market day pickup.

2. Vendors will respond back by no later than Friday before market day with an order confirmation and an invoice that in most cases will allow you to pre-pay for your order. If a vendor is not set up to take payment online they will accept checks (preferred) or cash in a sealed envelope on market day pickup.

The Pasturage LLC of Montague
This weekend! We will have bacon, pork steak, pork shoulder roast, pork butt roast, andouille, jalapeno brat, pork tongue and more pork chops. If you are interested in a half or whole pig, we are taking orders for a March 8 slaughter date.
There’s changes afoot in the pig realm at The Pasturage. To take place beginning in July, plans are to switch to a different heritage breed, change their ration profile to exclude soy while remaining certified organic, and use the pigs to renovate 2 acres of crappy grass then moving them into the woods for the heat of summer. We are trying several different breeds to find a good fit before we invest in breeding stock. Experiment! All that is to say: feedback welcome! We are doing this for you and we want you to tell us what you like! (Or don’t like)

If a vendor is not set up to take payment online they will accept checks (preferred) or cash in a sealed envelope on market day pickup.

If a vendor is not set up to take payment online they will accept checks (preferred) or cash in a sealed envelope on market day pickup.

The Pasturage has some new goodies in, including Chorizo, so be sure to check out their list! Lots of great meats also available from Pine Row, Scholls & Liberty Farms as well – no reason not to have excellent soups, stews and/or roasts this week!
