Three Speed Coffee of Grand Haven
Three Speed Coffee co is owned by Lori and Chad Shepard. Lori is a trained barista with a gift for service. Chad has been a construction worker for 30yrs. Chad started roasting as a hobby 6 years ago, studying, experimenting with different roast profiles, and regions. After sharing his craft roasted coffee with family, and friends the demand and audience grew. All Three Speeds coffee is roasted by sight, smell, sound based on a roast profile developed be Chad. All coffee is small batch, no automation. We invite all to sample what time and attention taste like in a cup.

Kale Nation is a collaboration between two neighbors who share the love of organic gardening and healthy eating. Marty Alexander & neighbors John & Renee Randell (former owners of Utopian Market in Montague) have joined forces to bring to market a variety of the best of juicing veggies.
In addition to a variety of kale, they will have chard, collards, and a selection of lettuces.

Cooking notes:
• Garlic Scapes – all can be used except for the tapered tip which is tough.  Chop small or coarse and add to eggs, stir fries, or anything that you would put garlic in.  Garlic lovers might try tossing them in oil and grilling.  Cooked scapes are less intense than bulb garlic, something like the green onion of the garlic world.
Kohlrabi & Apple Slaw
Ingredients
• 3/4 cup mayonnaise
• 2 tablespoons apple cider vinegar
• 1 tablespoon lemon juice
• 1 tablespoon prepared mustard
• 1 teaspoon white sugar
• 4 kohlrabi bulbs, peeled and grated
• 4 apples – peeled, cored, and diced
• salt and ground black pepper to taste

Grilling Steaks ~ Tenderloin, Porterhouse,  TBones, Cubed Steak, Hanger Steak!  Flank Steak.
Braising Beef ~ Round Steaks – I made Round Steak with loads of onions in the pressure cooker last week.  Yummy food, and you won’t heat up the house!  Flour, season, and brown the steaks in fat (I used lard).  Slice up a bunch of onions.  Put the steaks over the onions, add 1 cup water and cook at 10# pressure for 35 minutes.
