Little Farm in the Big Woods of Whitehall
We are looking forward to starting our experience as vendors at Sweetwater Market this week! We have a small farm in Whitehall where, up to this point, we have been raising vegetables, fruit and chickens for our own consumption. We are looking forward to providing these items that we have been enjoying to the customers at Sweetwater. Right now we mainly just have lots of eggs to sell, but we hope to expand our offerings in the future. Our chickens are fed organic feed from Grice Farms. We soak their feed for higher digestibility. In the summer they are in a chicken tractor that typically gets moved every few days. They enjoy bugs, greenery and scraps from our kitchen and garden. Our 1 and a half year old son enjoys going in their fence and following them around, because of this they are very tame chickens! We look forward to meeting everyone on Saturday.

Nicole Carvallo started making clothing for fun several years ago and now has become so well known for her stylish clothing using fair trade hemp & plant based or recycled Lycra fabrics that her online clothing business has become a full time job!
Not only does she use plant based fabrics but she also looks for fair trade & plant based right down to the thread which is either cotton or wool. She uses herbal dyes most of the time but also low impact synthetic dyes because she discovered that some of them actually do less harm to the environment and water usage then herbal dyes.

Event announcement!  We are having our 1st annual “Party in the Pasture” taking place October 7th from 3-7pm. Hidden Creek Farms is excited to be working with a local non-profit Jaycees of Muskegon.  We will be roasting beef from one of our own grass fed cows and will be serving side dishes grown right on the farm. We will have a cash bar with local Michigan brews and ciders and on tap drinks from Bodhi Tree Juice co and Lively up Kombucha. We will have a prepared bean salad along to market this week. Michael, the chef at The Farmhouse Deli in Douglas, has been using our beans in prepared dishes that he offers at the deli. We will be bringing small quantities of a different prepared bean dish each time we come to market.

If you’d rather cook your own, choose from our farm’s certified organic beans:
Bean Medley – A mixture of several of our beans, good for soup.
Black Turtle – Common black bean with a thick skin and a meaty texture.
Hidatsa Red – Similar to a kidney bean but with a slightly nutty taste, these beans are good in salads, chilis, soups or served with grains.
Painted Lady – Slightly sweet, with a smooth, creamy texture.

Corn Meal & Grits/Polenta — Our certified organic corn is Wapsie Valley, which is a yellow & red open pollinated (non-GMO) corn that dates back to the 1850s. After harvest we carefully clean our corn, removing broken kernels and other seeds that have gotten mixed in. It’s then delivered to the DeZwaan Windmill in Holland, where it is stone ground and made into grits/polenta or corn meal. Since no preservatives are added, it’s best to keep our corn products refrigerated or frozen. We will have a prepared bean salad along to market this week. Michael, the chef at The Farmhouse Deli in Douglas, has been using our beans in prepared dishes that he offers at the deli. We will be bringing small quantities of a different prepared bean dish each time we come to market.

If you’d rather cook your own, choose from our farm’s certified organic beans:
Bean Medley – A mixture of several of our beans, good for soup.
Black Turtle – Common black bean with a thick skin and a meaty texture.
Hidatsa Red – Similar to a kidney bean but with a slightly nutty taste, these beans are good in salads, chilis, soups or served with grains.
Painted Lady – Slightly sweet, with a smooth, creamy texture.
Yellow Indian Women – These buttery beans retain their shape well, and are less starchy than some other beans. Good all purpose bean.
Zebra – Smooth, creamy texture, full-bodied flavor, good all-purpose bean.
Or choose from the varieties we’ve swapped to obtain from another farmer from the thumb area of Michigan. Kevin from Sheridan Acres is transitioning to organic, and his beans have been grown without the use of chemicals. These varieties include:
Black Calypso – Plump, with creamy texture. Slightly nutty, mellow taste, something like a russet potato.
Dapple Grey – Large bean, meaty texture, slightly nutty taste. Great in soups or chilis.
