Tortilla Demo!
Interested in learning to make corn tortilla using local organic corn?  Come to market between 10a-11a for a free ongoing demo.  Amanda (from Maple Moon Farm) will be showing you how to make traditional corn masa.  Use masa to make fresh tortillas, tamales, cornbread and more.  You will have an opportunity to press you own tortilla and eat it!  We’ll be using corn from Shady Side Farm.

Travel to the Olson Farm of Shelby this weekend to watch sap gathered & turned into maple syrup!
Jim Olson is busy boiling this year’s batch of Taste of Spring Syrup and is inviting anyone who wants to come out! Jim says he will have a fire for people to roast hot dogs & join him in the sugar shack in the woods on the farm. His cell phone for people to call is 231-301-2278.

Titus Vandezande, owner of The Roaring Mouse, lives near
Hart, MI with his wife Ashley and 3 young children. He began roasting coffee
a  year ago and has now become obsessed with the process.
In his own words: ‘I believe that a great cup of coffee should be an experience, instead
of just a caffeine delivery system. I start with the best organically
grown coffees from around the world. I make sure they are purchased by
my suppliers at a price which is fair to the farmer. My single origin
coffees are typically roasted to a light or medium level, since their
individual character will be best tasted in a lighter roast.’
Here at The Roaring Mouse, we believe freshness is a very important
factor in making a great cup of coffee. Coffee tastes the best brewed
within 2 weeks of roasting. We will be providing whole bean coffee
only, which will be roasted fresh every week. All coffees are
available by the ounce, so you can get the perfect amount to last all
week.
This week we will be roasting:
•       Bolivia Fair Trade Organic – a sweet rich cup with chocolate notes.
Very good with dessert.
•       Ethiopia Sidama Fair Trade Organic – a complex cup with berry notes
and a sweet finish. This is one of our favorites!
•       Mexico Terruño Nayarita Organic – a bright, rich cup with caramel
notes and a sweet finish. This is another great cup from a group of
small farmers in Mexico. It is claimed to be the best coffee in
Mexico, and the farmers get a high price for the quality.
•       Decaffinated Peru Fair Trade Organic – rich and sweet, with
chocolate and caramel notes. A very delicious decaf! This coffee was
decaffeinated using the Mountain Water Process. It is a natural,
chemical free process which allows the bean to retain much of its
unique flavor.

Come taste the fresh difference! Brewed samples will be available for
all coffees!

This week I’ll be at market with our certified organic beans, all harvested last fall, in the following varieties:
Black Turtle – Common black bean with a thick skin and a meaty texture.
Black Valentine – Taste like kidney beans, great for salads, soups and dips.
Hidatsa Red – (Almost gone–get them now!) Slight nutty taste, use in chili or red beans and rice.
Hutterite Soup – Comfort food, cook fast, creamy soup, baby food.
Jacob’s Cattle – Big and meaty, taste & texture of new potatoes, traditional baked beans, chili.
Jacob’s Cattle Gold – Hold shape w/ long cooking, soak up other flavors well, soups and stews.
October – (Almost gone–get them now!) Creamy, velvety smooth texture, nutty, sweet flavor, thin skin, soups or chili.
Painted Lady – Slightly sweet bean, smooth, creamy texture, good in everything.
Pinto – Earthy flavor, great in Mexican cooking, falls apart under long cooking.

Crofters (NEW!) – This delicious cheese is aged 1 year with a medium sharp taste. The texture is dry and crumbly. Very similar to Parmesan.
Edam – A variety of Gouda made with skim milk: Elastic, yet firm, this flawless low fat cheese is our best melter, improving any dish.

Well our garden seeds have arrived!  I haven’t actually opened the box yet because that would mean it’s time to think about starting seeds and I’ve still got to finish cleaning out the basement before spring hits!  So much to do, so little time… I keep imagining that this dynamic somehow changes but all of my older friends assure me that THIS IS AN ILLUSION!  Yikes!  We are truly grateful to have such a full life with so many worthwhile tasks to attend to each day—the bakery among them.  This summer will mark our fifth full year of baking here at Laughing Tree.  How can this be?!  We are so grateful for your continued support and for the opportunity to bake for you, for those you love, and for those we love.

Greetings from Laughing Tree Brick Oven Bakery—
The end of February is here—Hallelujah!! That said, I am savoring the opportunity to tackle projects I could never touch in the summertime:  cleaning out the basement, making candles, trying out new recipes!  It’s also been great fun to see what sorts of snow forts and caves the children make out of the enormous snow mounds—and to go sledding and snowboarding. Three of us prefer sledding, two prefer snowboarding….  But we all enjoy soup and bread at the end of the day—and that’s mostly what’s for supper this time of year.  We devoured a loaf of Third Coast Three Seed on Friday and we are always slicing away at a loaf of Michigander.

February is American Heart Month. Show your heart some love by eating beans! From an article I read at eatingwell.com this week: “A 19-year analysis of the First National Heath and Nutrition Examination Survey found that people who ate beans four or more times a week were 22% less likely to develop heart disease than those who ate them less than once weekly.”
This week I’ll be at market with our certified organic beans, all harvested this fall, in the following varieties:
Black Turtle – Common black bean with a thick skin and a meaty texture.
Black Valentine – Taste like kidney beans, great for salads, soups and dips.
Hidatsa Red – (Almost gone–get them now!) Slight nutty taste, use in chili or red beans and rice.
Hutterite Soup – Comfort food, cook fast, creamy soup, baby food.
Jacob’s Cattle – Big and meaty, taste & texture of new potatoes, traditional baked beans, chili.
Jacob’s Cattle Gold – Hold shape w/ long cooking, soak up other flavors well, soups and stews.
October – Creamy, velvety smooth texture, nutty, sweet flavor, thin skin, soups or chili.
Painted Lady – Slightly sweet bean, smooth, creamy texture, good in everything.
Pinto – Earthy flavor, great in Mexican cooking, falls apart under long cooking.
Please let me know ahead of time if you’d like to order 5# bags of any one variety, so that I can pre-bag those and bring them along.

In addition, we’ll have Grassfield Farms raw aged cheeses along in the following flavors:
Aged Cheddar – You asked, and we listened! A sharp cheddar, aged a year. Award-winning!
Chili – Gouda with Red Chili flakes, this mild and creamy cheese has delightful spice without being too hot.
Country Dill – A house favorite, the dill herb in Gouda well represents the fresh grass that dominates the cows’ diet.
Edam – A variety of Gouda made with skim milk: Elastic, yet firm, this flawless low fat cheese is our best melter, improving any dish.

Garlic & Onion – The most aromatic of herbs. Don’t be the only one in the room to eat this spiced Gouda or you soon will be.
Gouda – A traditional handmade cheese in keeping with West Michigan’s (and our family’s) Dutch culture.
Lamont Cheddar – A rare, natural rind English cheese, named for the Grand River’s first settlement near our farm.
Leyden – Originally from the Rhine Valley, now the Grand River Valley; cumin perfectly compliments this aged Dutch cheese.

Our hens get lots of natural sunshine in their chicken hoop, a incredible feature of our gals home.  The hens naturally spend time inside, but still get sunlight through the transparent roof.  This keeps their vitamin D levels higher and makes for generally more content and healthier chickens.  We love these hens and our gentle rooster Otis.

A favorite evening snack at our house:  a bowl of our MOUTAIN CRUNCH GRANOLA with homemade yogurt and a sprinkling of raisins.  Have you tried either of our granolas lately?  Both varieties include OG rolled oats, local honey, OG extra-virgin coconut oil, and OG sunflower seeds. Of course the PB GRANOLA also has loads of all-natural Peanut Butter—which is why it actually tastes peanutty!! We think it’s some of the best granola we’ve ever had—we’d love to hear what you think!!  We always have samples of our granolas available at the markets.
HONEY OAT, HAZEL ROAD RUSTIC, and AUNTIE P’S CHOCOLATE CHERRY (perhaps with a stencil on top!)  all available this week.  Three dynamo breads…  We had some Honey Oat at home this week and I couldn’t believe how moist and luscious this loaf is.  All those soaked steel cut oats make this loaf custardy AND chewy.  Super yummy—and not available very often.  And as to that CHOCOLATE CHERRY loaf—I am definitely going to snag one for the household and hide it from the rest of the family!  Well, maybe I’ll share some with Annie (age 6)…  She loves chocolate almost as much as I do and she’s always asking us to make this loaf.  Feeling skeptical about chocolate bread?  Come have a taste at either Sweetwater or the Muskegon Market.  We love to sample our wares!

Erin Rant of Wind Dancer Farm will be at the market this week with 10 pound boxes of frozen certified organic blueberries.  Each box is $45.  There is a limited supply, so customers will need to get em while they’re hot…or cold as the case may be!

This week I’ll be at market with our certified organic beans, all harvested this fall, in the following varieties:
Black Turtle – Common black bean with a thick skin and a meaty texture.
Black Valentine – Black beans are back! Taste like kidney beans, great for salads, soups and dips.
Hidatsa Red – Slight nutty taste, use in chili or red beans and rice.
Hutterite Soup – Comfort food, cook fast, creamy soup, baby food.
Jacob’s Cattle – Big and meaty, taste & texture of new potatoes, traditional baked beans, chili.
Jacob’s Cattle Gold – Hold shape w/ long cooking, soak up other flavors well, soups and stews.
Marrow – Plump, soft white beans that soak up the flavors of whatever you cook them with.
October – Creamy, velvety smooth texture, nutty, sweet flavor, thin skin, soups or chili.
Pinto – Earthy flavor, great in Mexican cooking, falls apart under long cooking.
Zebra (limited quantities) – Also known as Amethyst. Creamy texture with a full-bodied flavor.

Garlic & Onion – The most aromatic of herbs. Don’t be the only one in the room to eat this spiced Gouda or you soon will be.

I received a note from Dennise Wright thanking all who gave so willingly to help the family with expenses last Saturday. Josh was taken off life support at 5pm that evening and passed away shortly after.  His funeral is Friday January 16 at 1:00pm at Central Assembly of God 876 Home St., Muskegon.

This week (weather permitting) I’ll be at market with our certified organic beans, all harvested this fall, in the following varieties:
Black Calypso (limited quantities) – Taste like kidney beans, great for salads, soups and dips. Also known as Orca beans–they look like killer whales (only smaller, and more friendly).
Black Turtle – Common black bean with a thick skin and a meaty texture.
Black Valentine – Black beans are back! Taste like kidney beans, great for salads, soups and dips.
Hidatsa Red – Slight nutty taste, use in chili or red beans and rice.
Hutterite Soup – Comfort food, cook fast, creamy soup, baby food.
Jacob’s Cattle – Big and meaty, taste & texture of new potatoes, traditional baked beans, chili.
Jacob’s Cattle Gold – Hold shape w/ long cooking, soak up other flavors well, soups and stews.
Marrow – Plump, soft white beans that soak up the flavors of whatever you cook them with.

We donated 800 pounds of potatoes to our local food bank for Thanksgiving.  Like you, it is very important to us that all our community members have access to healthy and local food.  Help us do this again for the December holidays!  You can help feed your neighbors in need.  Food banks are usually desperate for fresh, local food.  Potatoes are a great resource for this.  They store well, are nutrient dense, and most people are comfortable preparing them.  We’ll provide half and you fund the other half.  Potatoes are normally $1.50/lb, when you buy potatoes for the food bank, you pay only 0.75.  The power of human generosity is amazing.  May all be fed.
The Sweetwater Community has donated over 130# of potatoes so far this month, helps us donate even more!!  Thank you!

Laughing Tree Bakery of Hart
So this is one of the bakers’ favorite times of year as the oven is warm and the aromas holidayish inside our little bakehouse.  Cranberry Orange scones and bread seem to be the first things to leave our display case at market and we’ll have plenty of those things along with Hazel Road Rustic, and Pecan Deep Mud Brownies this coming weekend. We’ve decided to give Panettone a whirl this year.  What is THAT you ask?  Well, it’s a tasty, enriched  (eggs and butter) Italienne holiday bread that is very dramatic looking and is loaded with rum laden dried fruit, including orange zest…nothing says the holidays have arrived more than orange zest.  Kind of like brioche…with fruit…that looks like a giant muffin in a festive holiday wrap.  Just google it if you are curious to see the epic nature of this tasty confection.

Laughing Tree Bakery of Hart
After the whirlwind of pie-baking we enjoyed several really mellow days with our kids!  We played games, went sledding and ice-skating, and had pie and coffee for breakfast.  We really enjoyed the pies and hope that you did too!   We are a little sad that the pie is all gone and it’s back to TOAST for breakfast…  We would love your feedback about the pies!  Positive, negative, and everything in between…  We want to do them again next year and want them to be as tasty as they can be!

In an effort to nourish you through the winter we are offering some new teas!  Why buy local teas?  You are assured that the herbs you are buying are recently harvested.  Many herbal teas sold in stores are years, yes, years old.  These make for low quality teas.  Buying local means you can access local herbs, that aren’t available commercially.  Our Michigan Cold Care has the amazing New England Aster flowers in it.  These have powerful healing properties, but are still used primarily buy grassroots herbalist and are not found in commercial teas.  Buying local teas have the same advantaged of buying local produce; you can know the grower, the plants grow where you live, and more money stays in your community.

We donated 800 pounds of potatoes to our local food bank for Thanksgiving.  It is very important to us that all our community members have access to healthy and local food.  Help us do this again for the December holidays!  You can help feed your neighbors in need.  Food banks are usually desperate for fresh, local food.  Potatoes are a great resource for this.  They store well, are nutrient dense (you can eat them exclusively for months without nutritional deficiencies), and most people are comfortable preparing them.  We’ll provide half and you fund the other half.  Potatoes are normally $1.50/lb, when you buy potatoes for the food bank, you pay only 0.75.  The power of human generosity is amazing.  May all be fed.

-Trombicino-a delicious Italian squash that is very similar in flavor and texture to a Butternut.  These are a unique squash, that you won’t find in stores.  If you like Butternut, give these a try.

Wonderful Thai flavors, all grown right here in West Michigan. We combined our home grown ginger, lemongrass, Thai basil, leeks, and a pinch of cayenne for an incredible infusion of flavors. These can infuse water, chicken broth, coconut milk, or a combination. Each bag produces 2 qts of broth.

Cherry Vanilla Chevre is our newest addition to our spreadable Chevres. We think you’ll like this one, especially good on a morning bagel!
Chevreʹ  Fresh chevre with a nice spreading consistency, perfect for sandwich toppings and cooking. Cherry Capital Foods of Traverse City says  ” The chèvre produced by Meadow View has a pitch perfect acidity on the palate that becomes gently sweet and milky with a grassy note on the finish.”

Feta                                                                                       
A smooth and creamy feta which is low in salt and rich in fresh goat milk flavor. The brining process gives feta cheese a salty, tangy flavor and a crumbly consistency. Feta cheese can be served as a table cheese, used in baking savory dishes, or served as an appetizer or in salads. The classic Greek salad is made with Feta cheese. In crumbles or cubes for easy slicing.
Tomme de Fremont                                     
Our first aged cheese is quickly becoming a customer favorite! Developed from a French recipe, Tomme is a lower fat mold ripened cheese, aged at least 60 days. This gives the cheese a stronger flavor & firmer texture than the fresh Chevres, perfect for slicing.
Dutch Kase                                                               
A Meadow View Dairy original! If you are looking for a nicely aged but milder version of our Tomme, this is the cheese for you. Vacuum sealed without mold and aged at least 60 days.
Marco Similar to Dutch Kase but pasteurized and vacuum sealed, it comes in Pepper, Sage, Italian & Garlic.
