Shady Side Farm of Holland

Still harvesting beans. We have a few varieties left from last year, and we will have a few freshly-harvested varieties, too! This week Lona will be at market with our certified organic beans in the following varieties:

Black Calypso (fresh) – Taste like kidney beans, great for salads, soups and dips. Also known as Orca beans–they look like killer whales (only smaller).

Black Valentine (fresh) – Black beans are back! Taste like kidney beans, great for salads, soups and dips.

Hidatsa Red (fresh) – Slight nutty taste, use in chili or red beans and rice.

Hutterite Soup (fresh) – Comfort food, cook fast, creamy soup, baby food.

Jacob’s Cattle (last year’s, almost gone) – Big and meaty, taste & texture of new potatoes, traditional baked beans, chili.

Jacob’s Cattle Gold (last year’s, almost gone) – Hold shape w/ long cooking, soak up other flavors well, soups and stews.

October (last year’s, almost gone) – Creamy, velvety smooth texture, nutty, sweet flavor, thin skin, soups or chili.

Pinto (fresh) – Earthy flavor, great in Mexican cooking, falls apart under long cooking.

Yellow Indian Woman (fresh, VERY limited quantities) – Rich, creamy interior–similar to eating a good triple cream cheese, but without the fat or calories. Keeps their shape well. If you want Yellow Indian Woman beans, you’re going to have to get them this fall. Because of the very limited quantities, we will not be selling these beans in bulk.

In addition, we’ll have Grassfield Farms raw aged cheeses along in the following flavors:

Chili – Gouda with Red Chili flakes, this mild and creamy cheese has delightful spice without being too hot.

Country Dill – A house favorite, the dill herb in Gouda well represents the fresh grass that dominates the cows’ diet.

Edam – A variety of Gouda made with skim milk: Elastic, yet firm, this flawless low fat cheese is our best melter, improving any dish.

Garlic & Onion – The most aromatic of herbs. Don’t be the only one in the room to eat this spiced Gouda or you soon will be.

Gouda – A traditional handmade cheese in keeping with West Michigan’s (and our family’s) Dutch culture.

Lamont Cheddar – A rare, natural rind English cheese, named for the Grand River’s first settlement near our farm.

Leyden – Originally from the Rhine Valley, now the Grand River Valley; cumin perfectly compliments this aged Dutch cheese.

Finally, please ask if you are interested in a whole lamb for your freezer. You mail email or talk to Lona at the market. See you Saturday!

Meadow View Dairy of Fremont

If you need to pre-order a quantity of anything from the menu please feel free to call before Friday noon: 231-924-8251.

NEW! Cherry Vanilla Chevre is our newest addition to our spreadable Chevres. We think you’ll like this one, especially good on a morning bagel!

Chevreʹ  Fresh chevre with a nice spreading consistency, perfect for sandwich toppings and cooking. Cherry Capital Foods of Traverse City says  ” The chèvre produced by Meadow View has a pitch perfect acidity on the palate that becomes gently sweet and milky with a grassy note on the finish.”

Seasoned Chevreʹ

Our fresh Chevre available in your favorite flavorings: Blueberry Vanilla (great on a morning bagel!) Hickory-smoked bacon Bits, Garlic, Italian Herb, & Hot Pepper

Feta

A smooth and creamy feta which is low in salt and rich in fresh goat milk flavor. The brining process gives feta cheese a salty, tangy flavor and a crumbly consistency. Feta cheese can be served as a table cheese, used in baking savory dishes, or served as an appetizer or in salads. The classic Greek salad is made with Feta cheese. In crumbles or cubes for easy slicing.

Tomme de Fremont

Our first aged cheese is quickly becoming a customer favorite! Developed from a French recipe, Tomme is a lower fat mold ripened cheese, aged at least 60 days. This gives the cheese a stronger flavor & firmer texture than the fresh Chevres, perfect for slicing.

Dutch Kase

A Meadow View Dairy original! If you are looking for a nicely aged but milder version of our Tomme, this is the cheese for you. Vacuum sealed without mold and aged at least 60 days.

Marco Similar to Dutch Kase but pasteurized and vacuum sealed, it comes in Pepper, Sage, Italian & Garlic.

Other items from our farm:

We’ll also have eggs from our free-range, GMO-free flock.

Laughing Tree Bakery of Hart

This is definitely the time of year when the weather starts getting even more unpredictable as usual… One minute the kids are outside building houses out of bakery firewood and blankets and the next minute we are scrambling to drag blankets up onto the porch so they don’t get rained on.  Wait another twenty minutes and we are back out playing in the yard and tending to outside chores—like picking raspberries!  We’ve noticed the buzzing bees and yellow jackets and wasps are more intense than usual this fall (we can’t keep them out of the cases at market) and the raspberry patch is swarming with them—I’m afraid to take the baby into the patch!  Do the bugs know something we don’t know?  Like maybe it’s going to be a brutal winter?  We shall see…  In the meantime, thanks for coming out and supporting us at the markets rain and shine!

PLEASE NOTE:  We will not be at Market on September 20th or 27th, so do stock up now on beef, coffee, olive oil, and our vegetables.  We will return on October 4th with all beef cuts.  We will also have quarters of beef for sale then.  Please order them now if you want to have them cut and wrapped the way you choose.  They went to the butcher yesterday.  AND the price is rising.  Beef prices are so high that we can sell our cattle unbutchered for almost as much as we are getting for them butchered (with lots more labor and expense involved!)  Sorry, but that’s the current state of the beef market.  There’s demand and not enough supply to meet it.

More tomatoes:  Sungold, Sweet 100, Black Cherry, Lollipop, Juliet, Principe Borgese Italian Drying Tomato, and Roma Paste tomatoes.  We may have some half bushels for canning.

BEEF! We are out of a lot of cuts.   Advance Orders will be accepted until 7pm Friday evening. earthscapefarm@gmail.com. Please put Beef Order in the subject line. Thanks!

****MAMA’A ALL PURPOSE SALVE IS BACK*****

This season’s batch is ready.  We lovingly harvest medicinal herbs from our gardens, as well as those growing wild on our land.  We are so grateful for these healing plants.  We infuse them in organic olive oil, and then blend them with high quality ingredients like local bee’s wax, fair trade organic cocoa butter, and pure lanolin.  We use a wide range of herbs including calendula, plantain, St.John’s Wort, comfrey, roses, chickweed, and self-heal.  This makes the salve helpful for everything from bug bites to diaper rash to burns or anything else that needs more than a kiss.

This year we have 3 sizes to meet your needs

2oz glass jar $12

4oz family size glass jar $20

or for easy portability

Mama on the Go $3.50 or 2/$6

(We packaged our Mama’s All Purpose Salve in a 100% recycled plastic tube, so you can have Mama’s anywhere.  Stash one in your purse, diaper bag, backpack, or anywhere else you may need it.)

Get yours while they’re here!

Wow, what a beautiful weekend.  September in Michigan is a month to savor without a doubt.  We’re enjoying cool evenings and brilliant sunshine and the abundance that comes at this time in the garden.  We made a foray to Lake Michigan this weekend and the brave ones in our family had a glorious swim—I think early September is actually the best time to swim in the big lake.  We soaked up the sun and ate cookies with cousins… Speaking of cookies, have you tried the Pecan Maple Oatie cookies lately?  We’ve made some small changes to this cookie recently and we think it’s better than ever. As always we’d love your feedback.  Come find one at the markets this weekend (great with a cup of Aldea coffee) along with the much-loved Hazel Road Rustic.

One of the all-time favorite sandwiches around our house is a nice thick slice of Michigander with homemade pesto, Vermont Cheddar, and cucumber slices.  I think on Friday Finn and Annie had this for lunch and for supper!  Then this morning, Annie (age almost 6) requested it again for breakfast!  Why not?  This was after her Saturday morning Whangdangdoodler cookie…  Yes, I am a mother who allows her children to eat cookies for breakfast now and again.  A Friday night ritual here: Charlie bops in the house (from the bakery) to kiss the kids goodnight and they tell him what pastry they’d like him to leave for their breakfast.  Finn almost always chooses a ginger scone and Annie almost always choose a cookie that contains chocolate…  Alida just laughs and goes back to nursing—but no doubt she’ll soon be clamoring for cookies, and scones, and pesto sandwiches as well!  In fact, this morning she was going crazy gumming on the butt end of the Kamut loaf with a bit of almond butter.

What about you?  What loaf or goodie do you like for breakfast?

I don’t think anyone loves TOMATO SANDWICHES as much as I do and our tomatoes are finally ripening!!  They were pretty small when they went into the ground but they’ve held their own despite the cool summer weather.  My favorite bread for tomato sandwiches is either the HAZEL ROAD RUSTIC or the MICHIGANDER.  Two great loaves with fabulous texture and a chewy crust—perfect with homemade pesto and ripe tomatoes.  Or for a spicy rendition try our CHILE CHEDDAR.  Come find it all at the market this weekend!

We will be at market Saturday with an assortment of our homegrown produce, some yarn from our sheep, and hopefully at least a few dozen duck eggs for sale.

We will also have a variety of seafood products from The Fishmonger’s Wife, including their very own Great Lakes Whitefish.   There will be frozen and smoked fish, fish sausage, and smoked fish dip available for purchase.   If you are looking for anything in particular, I would urge you to call the Fishmonger’s retail store at (231) 755-1600 and tell them that you would like to place an order for pickup at Sweetwater.  You will need to do this by Thursday night, however, or we won’t be able to guarantee that your order will be ready.   Also, it is our plan to start coming to Sweetwater every other week from now on, so be sure to stock up enough fish for two weeks instead of one!

Shady Side Farm of Holland

This week Lona will be at market with our certified organic beans in the following varieties:

Black Turtle – Common black bean, great in Mexican dishes

Hutterite Soup – Comfort food, cook fast, creamy soup, baby food

Jacob’s Cattle – Big and meaty, taste & texture of new potatoes, traditional baked beans, chili

Jacob’s Cattle Gold – Hold shape w/ long cooking, soak up other flavors well, soups and stews

Nuña (near the end of our supply) – Good for sautéing in pan with oil and spices (soak first!), taste like fried potatoes

Marrow (near the end of our supply) – Creamy bean with a slight taste of bacon, good in soups and baked beans

October – Creamy, velvety smooth texture, nutty, sweet flavor, thin skin, soups or chili

Pinto – Earthy flavor, great in Mexican cooking, falls apart under long cooking

We are out of several of our varieties already. If you have a favorite bean, you might want to stock up on it!

Spring Herb – A Polkton Corners base (a softer cheese) with chives, parsley, garlic and tarragon. Very tasty!

Laughing Tree Bakery of Hart

It’s almost 10:30pm and I’ve just finished with the day’s work.  The last tasks of the day (after putting children to bed) included chasing 15 chickens and 6 ducks around in the dark (they are young and haven’t figured out that going into their little house will keep them alive through the night).  On my way back into the house I grabbed the half-bushel of beans I picked first thing this morning that never made it further than the front porch!  Prior to that I carried all of the goodies from the market to the basement where our fridge lives:  blueberries, melons, cherries.  The peaches and plums are already sleeping on the counter.  Tomorrow we’ll sort 50 pounds of OG blueberries and prep them for the freezer—and hopefully freeze some beans as well.  Oh the season of abundance!  Food and sunshine are abundant…and sleep is not.  As I go up to bed I’ll put a blanket on Charlie who is catching up on sleep on the sofa—he fell asleep there at 8 o’clock…  after just a handful of hours of sleep on Thursday and Friday nights.

In the summer months of abundance, it is a joy to bake for you and your families.  Somebody’s got to make the bread for tomato sandwiches!!
