The Roaring Mouse of Hart
It’s coffee time!  We are now serving freshly brewed pour-over coffee!
Fill a ceramic mug to enjoy as you shop, or get a to-go cup to keep you going through the morning.
A mug-full is $1 and the to-go cup is $3.
In the roaster this week:
         Bolivia Fair Trade Organic – a sweet rich cup with chocolate notes and a bright acidity. Very good with dessert.
         Ethiopia Sidama Fair Trade Organic – a complex cup with berry notes and a sweet finish. This is one of our favorites!
        Decaffinated Peru Fair Trade Organic – rich and sweet, with chocolate and caramel notes. A very delicious decaf! This coffee was decaffeinated using the Mountain Water Process. It is a natural, chemical free process which allows the bean to retain much of its unique flavor.
        Sumatra Fair Trade Organic – Bold, earthy, with a molasses sweetness and a light acidity. This is a limited supply and is only available by the ounce.
Come taste the fresh difference! Brewed samples will be available for all coffees!

We try not to roast too much extra in order to keep the coffee fresh every week.
Advance orders will ensure that we don’t run out of your favorite coffee before you get some!

Price is $1.10/ounce or volume discount $12/12 oz bag $16/16 oz bag

We are a Bridge Card Market!

Winter Market Schedule
Winter Schedule for February is as follows:
OPEN February 14, and February 28.
CLOSED February 7th, & 21st.

Attending this week’s market:

Shady Side Farm of Holland
February is American Heart Month. Show your heart some love by eating beans! From an article I read at eatingwell.com this week: “A 19-year analysis of the First National Heath and Nutrition Examination Survey found that people who ate beans four or more times a week were 22% less likely to develop heart disease than those who ate them less than once weekly.”
This week I’ll be at market with our certified organic beans, all harvested this fall, in the following varieties:
Black Turtle – Common black bean with a thick skin and a meaty texture.
Black Valentine – Taste like kidney beans, great for salads, soups and dips.
Hidatsa Red – (Almost gone–get them now!) Slight nutty taste, use in chili or red beans and rice.
Hutterite Soup – Comfort food, cook fast, creamy soup, baby food.
Jacob’s Cattle – Big and meaty, taste & texture of new potatoes, traditional baked beans, chili.
Jacob’s Cattle Gold – Hold shape w/ long cooking, soak up other flavors well, soups and stews.
October – Creamy, velvety smooth texture, nutty, sweet flavor, thin skin, soups or chili.
Painted Lady – Slightly sweet bean, smooth, creamy texture, good in everything.
Pinto – Earthy flavor, great in Mexican cooking, falls apart under long cooking.
Please let me know ahead of time if you’d like to order 5# bags of any one variety, so that I can pre-bag those and bring them along.

In addition, we’ll have Grassfield Farms raw aged cheeses along in the following flavors:
Aged Cheddar – You asked, and we listened! A sharp cheddar, aged a year. Award-winning!
Chili – Gouda with Red Chili flakes, this mild and creamy cheese has delightful spice without being too hot.
Country Dill – A house favorite, the dill herb in Gouda well represents the fresh grass that dominates the cows’ diet.
Edam – A variety of Gouda made with skim milk: Elastic, yet firm, this flawless low fat cheese is our best melter, improving any dish.

Garlic & Onion – The most aromatic of herbs. Don’t be the only one in the room to eat this spiced Gouda or you soon will be.
Gouda – A traditional handmade cheese in keeping with West Michigan’s (and our family’s) Dutch culture.
Lamont Cheddar – A rare, natural rind English cheese, named for the Grand River’s first settlement near our farm.
Leyden – Originally from the Rhine Valley, now the Grand River Valley; cumin perfectly compliments this aged Dutch cheese.

Also, if there is anything woolly that you are interested in, it doesn’t hurt to shoot me an email. I can’t take everything along every week, so let me know what you’d like me to focus on. Hope to see you Saturday!

Laughing Tree Bakery of Hart
Greetings from Laughing Tree Brick Oven Bakery—
A favorite evening snack at our house:  a bowl of our MOUTAIN CRUNCH GRANOLA with homemade yogurt and a sprinkling of raisins.  Have you tried either of our granolas lately?  Both varieties include OG rolled oats, local honey, OG extra-virgin coconut oil, and OG sunflower seeds. Of course the PB GRANOLA also has loads of all-natural Peanut Butter—which is why it actually tastes peanutty!! We think it’s some of the best granola we’ve ever had—we’d love to hear what you think!!  We always have samples of our granolas available at the markets.
HONEY OAT, HAZEL ROAD RUSTIC, and AUNTIE P’S CHOCOLATE CHERRY (perhaps with a stencil on top!)  all available this week.  Three dynamo breads…  We had some Honey Oat at home this week and I couldn’t believe how moist and luscious this loaf is.  All those soaked steel cut oats make this loaf custardy AND chewy.  Super yummy—and not available very often.  And as to that CHOCOLATE CHERRY loaf—I am definitely going to snag one for the household and hide it from the rest of the family!  Well, maybe I’ll share some with Annie (age 6)…  She loves chocolate almost as much as I do and she’s always asking us to make this loaf.  Feeling skeptical about chocolate bread?  Come have a taste at either Sweetwater or the Muskegon Market.  We love to sample our wares!
If you pre-order this week (or any time) please include your PHONE NUMBER.  Thanks!!

Liberty Family Farm
As you may have heard, Josh Wright, younger brother of Tim, was in a very bad car accident a few days ago. The family is keeping vigil at his bedside in Hackley Hospital; please keep them in your thoughts and prayers.
If you would like to help in some way, gift gas cards and cash would be the most needed staples right now.
Thanks.Shady Side Farm of Holland
This week (weather permitting) I’ll be at market with our certified organic beans, all harvested this fall, in the following varieties:
Black Calypso (limited quantities) – Taste like kidney beans, great for salads, soups and dips. Also known as Orca beans–they look like killer whales (only smaller, and more friendly).
Black Turtle – Common black bean with a thick skin and a meaty texture.
Black Valentine – Black beans are back! Taste like kidney beans, great for salads, soups and dips.
Hidatsa Red – Slight nutty taste, use in chili or red beans and rice.
Hutterite Soup – Comfort food, cook fast, creamy soup, baby food.
Jacob’s Cattle – Big and meaty, taste & texture of new potatoes, traditional baked beans, chili.
Jacob’s Cattle Gold – Hold shape w/ long cooking, soak up other flavors well, soups and stews.
Marrow – Plump, soft white beans that soak up the flavors of whatever you cook them with.
October – Creamy, velvety smooth texture, nutty, sweet flavor, thin skin, soups or chili.
Pinto – Earthy flavor, great in Mexican cooking, falls apart under long cooking.
Zebra (limited quantities) – Also known as Amethyst. Creamy texture with a full-bodied flavor.
In addition, we’ll have Grassfield Farms raw aged cheeses along in the following flavors:
Aged Cheddar – You asked, and we listened! A sharp cheddar, aged a year. Award-winning!
Cherry Christmas (Seasonal Variety) – Gouda with sage and dried cherries–try it!

Please let me know ahead of time if you’d like to order 5# bags of any one variety of beans, so that I can pre-bag those and bring them along. In addition, if there is anything woolly that you are interested in, it doesn’t hurt to shoot me an email. I can’t take everything along every week, so let me know what you’d like me to focus on. Hope to see you Saturday!

Vinnie Sutherland Copper Beauties
Vinnie will bring her hammered copper artworks, and if you haven’t already seen her art elsewhere you’ll be amazed at the beauty & intricacy of her designs. Describing the process for an Art Prize entry: “After the tin has been worked, patinated and engraved, it’s pewter-like hue and fine lines bring to mind old paper mono prints printed from plates etched using intaglio techniques.”  Vinnie says that living in a tiny house within a large wood intrigues and encourages her to further exploration through her artwork. We donated 800 pounds of potatoes to our local food bank for Thanksgiving.  Like you, it is very important to us that all our community members have access to healthy and local food.  Help us do this again for the December holidays!  You can help feed your neighbors in need.  Food banks are usually desperate for fresh, local food.  Potatoes are a great resource for this.  They store well, are nutrient dense, and most people are comfortable preparing them.  We’ll provide half and you fund the other half.  Potatoes are normally $1.50/lb, when you buy potatoes for the food bank, you pay only 0.75.  The power of human generosity is amazing.  May all be fed.
The Sweetwater Community has donated over 130# of potatoes so far this month, helps us donate even more!!  Thank you!

Laughing Tree Bakery of Hart
So this is one of the bakers’ favorite times of year as the oven is warm and the aromas holidayish inside our little bakehouse.  Cranberry Orange scones and bread seem to be the first things to leave our display case at market and we’ll have plenty of those things along with Hazel Road Rustic, and Pecan Deep Mud Brownies this coming weekend. We’ve decided to give Panettone a whirl this year.  What is THAT you ask?  Well, it’s a tasty, enriched  (eggs and butter) Italienne holiday bread that is very dramatic looking and is loaded with rum laden dried fruit, including orange zest…nothing says the holidays have arrived more than orange zest.  Kind of like brioche…with fruit…that looks like a giant muffin in a festive holiday wrap.  Just google it if you are curious to see the epic nature of this tasty confection.
We’re also offering gift boxes filled with DynOmite Laughing Tree treats like Pecan Brownies, Cherry Almond Biscotti, Buttercrunch Toffee, Gingerbread Children, and Wangdang Delights.  YOU will be the hero(ine) of the holiday party by showing up with one of these babies.

In an effort to nourish you through the winter we are offering some new teas!  Why buy local teas?  You are assured that the herbs you are buying are recently harvested.  Many herbal teas sold in stores are years, yes, years old.  These make for low quality teas.  Buying local means you can access local herbs, that aren’t available commercially.  Our Michigan Cold Care has the amazing New England Aster flowers in it.  These have powerful healing properties, but are still used primarily buy grassroots herbalist and are not found in commercial teas.  Buying local teas have the same advantaged of buying local produce; you can know the grower, the plants grow where you live, and more money stays in your community.
NEW THIS WEEK:
*MICHIGAN COLD CARE-We combined some amazing Michigan herbs for a great remedy for colds and fevers.  Elder flowers, Spearmint, Yarrow leaf and flowers, Peppermint, and New England Aster. *not recommended for children and women who are pregnant or nursing
*MICHIGAN GENTLE COLD CARE-Healing and gentle herbs for colds and fevers.  Elder flowers, spearmint, catnip leaf and flowers, peppermint, and New England Asters.  Suitable for children.
*LOVELY LEMON-A delicious blend of Lemongrass, Lemon Verbena, Lemonbalm, and Lemon Bergamot.  Most commercial lemon teas contain ‘natural lemon flavor’.  Only real plants in this tea.  A nice mellow lemon flavor.

Meadow View Dairy of Fremont
If you need to pre-order a quantity of anything from the menu please feel free to call before Friday noon: 231-924-8251.
Cherry Vanilla Chevre is our newest addition to our spreadable Chevres. We think you’ll like this one, especially good on a morning bagel!
Chevreʹ  Fresh chevre with a nice spreading consistency, perfect for sandwich toppings and cooking. Cherry Capital Foods of Traverse City says  ” The chèvre produced by Meadow View has a pitch perfect acidity on the palate that becomes gently sweet and milky with a grassy note on the finish.”
Seasoned Chevreʹ
Our fresh Chevre available in your favorite flavorings: Blueberry Vanilla (great on a morning bagel!) Hickory-smoked bacon Bits, Garlic, Italian Herb, & Hot Pepper
Feta
A smooth and creamy feta which is low in salt and rich in fresh goat milk flavor. The brining process gives feta cheese a salty, tangy flavor and a crumbly consistency. Feta cheese can be served as a table cheese, used in baking savory dishes, or served as an appetizer or in salads. The classic Greek salad is made with Feta cheese. In crumbles or cubes for easy slicing.
Tomme de Fremont
Our first aged cheese is quickly becoming a customer favorite! Developed from a French recipe, Tomme is a lower fat mold ripened cheese, aged at least 60 days. This gives the cheese a stronger flavor & firmer texture than the fresh Chevres, perfect for slicing.
Dutch Kase
A Meadow View Dairy original! If you are looking for a nicely aged but milder version of our Tomme, this is the cheese for you. Vacuum sealed without mold and aged at least 60 days.
Marco Similar to Dutch Kase but pasteurized and vacuum sealed, it comes in Pepper, Sage, Italian & Garlic.
Other items from our farm:

Laughing Tree Bakery of Hart
WE ARE SELLING OUR OWN PIES THE WEEK OF THANKSGIVING!  That’s right—for the first time ever you can order Laughing Tree Bakery Pies for pickup.  See below for details!
We are offering two fabulous pies for Thanksgiving week:
RIGHTEOUS PUMPKIN PIE:  We believe this is the most unique pumpkin pie you will ever try…  We make the custard using two different squash varieties grown for us by our friends down the road at Maple Moon Farm (the Long Pie Pumpkin and Trombecino Squash).  Sweetened with organic Demerara brown sugar, and fattened up with organic cream and our own fresh eggs—this custardy pumpkin filling melts in your mouth!  But that is just the beginning…  What makes this pie so over-the-top righteous is the crust.  We combine oats, sunflower seeds, and flax seeds with a bit of sugar, organic butter and salt to produce an extraordinarily memorable oatie/seedy/wee-bit-salty crust.  You  heard me right—no flour in this whole pie—just deliciousness.    9 inch pie—serves 8 happily.  $20
ABBA PETER’S FAVORITE APPLE PIE:  Hilde’s dad is an out and out apple pie fanatic.  For his 60th birthday he didn’t want cake—he just wanted Hilde’s apple pie…  Well here it is folks—the real deal—and Hilde will be rolling every single one out with her rolling pin!  We use a combination of flours (including organic Michigan-grown Barley flour) and lots of organic butter to create a flaky yet substantial crust.  Then we pack it as full as we can with local Northern Spies, Mutsus, and Ida Red apples, organic Demerara brown sugar, and a sprinkling of spice to do it up right!  Just sweet enough… The way Abba Peter likes it!  9 inch pie—serves 8 for breakfast.  $25
WE ARE MAKING A LIMITED QUANTITY OF PIES so we encourage you to PRE-ORDER!

Maple Moon Farm of Shelby
Winter has started out in full force.  We hope you all are staying warm and nourished in this cold weather.
The gray skies have kept the hoops quiet and still, the plants are resting and not growing without the sun.  We are hoping the sun comes out and we are able to pick before Thanksgiving.  We don’t feel optimistic that we’ll have greens this Saturday, however we may be able to pick early next week.  If you are interested in picking up greens next Wednesday in Muskegon, please let us know.  We will notify you if they are available. Call(231)861-2535 or email maplemoonfarm@gmail.com
This week we’re offering:
*CARROTS
*SWEET POTATOES
*FARMER GRADE SWEET POTATOES
(farmer grade refers to produce that has been graded out for size or minor damage, this is the produce that many farmers eat.  These are $1 less per pound than our regular sweet potatoes)
*POTATOES (we’ll be bringing our best mashers!)
*WINTER SQUASH
-Trombicino-a delicious Italian squash that is very similar in flavor and texture to a Butternut.  These are a unique squash, that you won’t find in stores.  If you like Butternut, give these a try.  These typically weight 3-6 pounds
-Butternut
-Acorn
-Spaghetti
-Buttercup-a delicious little desert squash, with dry creamy flesh.  Our favorite for baking and mashing.
-Long Pie-a smooth and creamy fleshed pumpkin. Best pie pumpkin we’ve tasted!  Get these for your holiday pies, before they’re gone.

BAKING PIE?  WE RECOMMEND TROMBICINO, BUTTERNUT, AND LONG PIE.

*DELICATA SQUASH
-these are tasty little gems!  These cook up so tender and delicate you can eat the skin and flesh together. (no peeling!)  They are typically about a pound.
BROTH BAGS
We dried a mix of our nutritious vegetable and herbs for a  simple and healthy vegetable broth or to add to bone broth.  These include onion, carrot, celery, parsley, salt and peppercorns (the peppercorns are not produced on our farm, but ethically sourced and certified organic).  They are bundled in a cotton muslin bag for a quick, easy and local vegetable broth. (the whole bag can be composted after use).  Pre-packaged broths in stores are devoid of many nutrients due to the heat produced in packaging.  Our broth mix contains a dense amount of vitamins and minerals. Each bag produces 2 quarts of broth.
THAI GINGER BROTH BAGS!
Wonderful Thai flavors, all grown right here in West Michigan. We combined our home grown ginger, lemongrass, Thai basil, leeks, and a pinch of cayenne for an incredible infusion of flavors. These can infuse water, chicken broth, coconut milk, or a combination. Each bag produces 2 qts of broth.

Attending this Saturday’s market:Shady Side Farm of Holland
After this Saturday, I will not be at market for 4 weeks. Please stock up now on beans and cheese. Cheese keeps well in the fridge if unopened. This week I’ll be at market with our certified organic beans in the following varieties:
Black Calypso (fresh, limited quantities) – Taste like kidney beans, great for salads, soups and dips. Also known as Orca beans–they look like killer whales (only smaller, and more friendly).
Black Turtle (fresh) – Common black bean with a thick skin and a meaty texture.
Black Valentine (fresh) – Black beans are back! Taste like kidney beans, great for salads, soups and dips.
Hidatsa Red (fresh) – Slight nutty taste, use in chili or red beans and rice.
Hutterite Soup (fresh) – Comfort food, cook fast, creamy soup, baby food.
Jacob’s Cattle (fresh) – Big and meaty, taste & texture of new potatoes, traditional baked beans, chili.
Jacob’s Cattle Gold (fresh) – Hold shape w/ long cooking, soak up other flavors well, soups and stews.
Marrow (fresh) – Plump, soft white beans that soak up the flavors of whatever you cook them with.
October (last year’s, almost gone) – Creamy, velvety smooth texture, nutty, sweet flavor, thin skin, soups or chili. Because these are last year’s beans, they are discounted to $5 per pound.
Pinto (fresh) – Earthy flavor, great in Mexican cooking, falls apart under long cooking.
Yellow Indian Woman (fresh, VERY limited quantities) – Rich, creamy interior–similar to eating a good triple cream cheese, but without the fat or calories. Keeps their shape well. If you want Yellow Indian Woman beans, you’re going to have to get them this fall. Because of the very limited quantities, we will not be selling these beans in bulk.
Zebra (fresh) – Also known as Amethyst. Creamy texture with a full-bodied flavor.
In addition, we’ll have Grassfield Farms raw aged cheeses along in the following flavors:
Aged Cheddar (NEW!) – You asked, and we listened!
I will have some handmade and/or wool goods along this week–mittens, for sure, and perhaps socks and rugs. These are items we’ve made (or had made from our wool) in preparation for the Kerstmarkt (Christmas Market) in Holland.

Simply Soaps of Spring Lake
Healing Clay, no home should be without it! Redmond Clay is a food grade, mineral rich bentonite clay. It can be used on burns, scrapes, cuts, insect bites, diaper rash, acne, cysts and more to draw out the bacteria and help heal the wound. Since this is food grade I take it internally mixed in water to help flush toxins from my body (it actually tastes good!) and I use it mixed with a few other ingredients as a wonderful toothpaste (another product from Simply Soaps when I find the right toothpaste containers!). It’s absolutely fantastic!
My grown daughter had a cyst on her chest that would not go away no matter what she did. She tried every natural means she could in hopes of avoiding a trip to the doctor to cut it out but it was only getting worse. She tried the clay, made a poultice, covered it and it began to drain that very day! She continued treating it this way for the next 3 days and it continued to drain. It healed and she never went to the doctor! I witnessed this first hand, I’m sold! 12 oz jar only $8
