Husband and wife team George & Rosanne Simikowski  recently moved to Ferrysburg from Chicago.
From George: “We grew tired of the stress of big city living. It’s always been my dream to start a mushroom farm.
When most people think of mushrooms they think of basic whites and portobello. I want to change that mindset, and introduce them to a more medicinal and culinary way to approach a new food source.
My goal is to master growing different strains and coordinating yields for a variety of tasty offerings each week. I want to grow for people who love their kitchens and want to try new products with a high priority of quality local food.
Some of the health benefits of my mushrooms are:
Shitake – vitamin B, fight cancer cells, cardiovascular disease, control blood sugar levels, reduce inflammation, boost immune system, fight obesity, boost energy levels, reduce risk of arthritis.
Oyster – naturally reduce joint pain, heart healthy – lowers risk of strokes, high in iron – prevent anemia, increased energy levels. High in protein, fibre, iron, zinc, potassium, calcium.
Not only are mushrooms good for you but they are versatile as well in stews, stir fries, baked, broiled and grilled.
They look pretty cool too!”
