These varieties include:

Black Calypso Heirloom – Plump, with creamy texture. Slightly nutty, mellow taste, something like a russet potato.
Black Turtle – Common black bean with a thick skin and a meaty texture.
Black Valentine Heirloom – Taste like kidney beans, great for salads, soups and dips.
Green Flageolet Heirloom – Fine, thin bean with a creamy, firm texture and a sweet mellow flavor.
Hidatsa Red Heirloom – Similar to a kidney bean but with a slightly nutty taste, these beans are good in salads, chilis, soups or served with grains.
Hutterite Soup Heirloom – Comfort food, cook fast, creamy soup, baby food.
Jacob’s Cattle Heirloom – Big and meaty, taste & texture of new potatoes, traditional baked beans, chili.

October Heirloom – Creamy, velvety smooth texture, nutty, sweet flavor, thin skin, soups or chili.
Nuña Heirloom – Soak, then fry in oil in a pan for a few minutes for a firmer bean experience. Taste like fried potatoes.
Painted Lady Heirloom – Slightly sweet, with a smooth, creamy texture.
Pinto – Earthy flavor, great in Mexican cooking, falls apart under long cooking.
Tiger Eye Heirloom – Rich, hearty flavor, with a smooth texture and tender skins.
