Excerpts from a laying hen’s diary:
Jan 14. Old Rooster giving the stink eye toward the young roosters; he sees they are
developing spurs.
Jan 15. Sisters getting snarky; too many days cooped up with one another. Could go
outside but too white, too cold.
Jan 16. Little sun on ceiling was left on all day. Why go out to the big sun in the sky.
Jan 17. Our human providers doing their best make us comfortable everyday with alfalfa
bedding, local certified organic feed and fresh water but it’s not enough. Dukkha; we
want more. We remember strawberries, corn, squash, kale, scratching in the pasture, dust
baths.
Jan 18. Warming in the air, our hearts quicken, big sun bright with the promise of
warmth. More of us venture out. Less snarkiness among sisters, Rooster a bit more
relaxed.
Excerpts from the a succulent frozen meat chicken diary:
Each day the same, Nirvana, expect nothing but what is at the moment.
Potatoes don’t have diaries. Empty of thought they know they are better than the plain
ol’ white potatoes in the grocery store and wait to be sorted for market.

Our beef is back from Ebel’s! We’ll have a full selection of cuts this week. Pre orders are encouraged if there’s something that you just can’t live without!
Also, great news! We have beef at Graham’s Organics again! Finally!!! Stay tuned for the arrival date, but we’ll have snack sticks, salami, and hot dogs returning soon!
This week we’ll also be bringing a nice selection of honey, mostly raw and mostly glass containers.

Cubed Steak –We eat it about once a week – pan-fried in a little butter and EVOO, about 2-3 minutes per side. It’s a quick supper!

Roasts ~ Chuck, Rolled Rump Roast, English and Arm Roasts,

SHORT RIBS: I like to cook up a large crock pot of them, remove bones and fat, and then use the beef for Stroganoff, Asian beef with rice, etc.
