Attending this week’s market: 

Shady Side Farm of Holland
This week we will be at market with our certified organic beans, all harvested last fall, in the following varieties:
Black Turtle – Common black bean with a thick skin and a meaty texture.
Hidatsa Red – Similar to a kidney bean but with a slightly nutty taste, these beans are good in salads, chilis, soups or served with grains.
Jacob’s Cattle – Big and meaty, taste & texture of new potatoes, traditional baked beans, chili.
Marrow – Plump, soft white beans that soak up the flavors of whatever you cook them with. Great soup beans.
Pinto – Earthy flavor, great in Mexican cooking, falls apart under long cooking.
Tiger Eye – Rich, hearty flavor, with a smooth texture and tender skins.
Zebra – Smooth, creamy texture, full-bodied flavor, good all-purpose bean.
We are very low in stock with some of these beans, and (as you can see) are completely sold out of many others. The good news is that bean harvest is just around the corner. We already know that some of the beans will not be producing well, as we had a very dry spell right after planting, and many of the seeds never germinated, or germinated much too late. But we are hopeful to have more beans available for you soon!
We plan to have corn meal and grits available for you Saturday, as well as a selection of our thick wool hiker socks—perfect for those cool fall nights that are in store for us soon.
Ask me about getting a whole lamb for your freezer this fall! These lambs are grazed on fresh pasture each day all spring/summer/fall and fed hay only (plus minerals) during the few winter months that we house them in the barn.

The Hedgehog (Hydnum Repandum) mushroom is a new seasonal item for us. Flavor is similar to chanterelle, but can be used in many different dishes.
Great in casseroles, with pasta, and goes well in any meat dishes.
Perfect for folks who have trouble dealing with the texture of some mushrooms.
