Attending this week’s market: 

Shady Side Farm of Holland
This week we will be at market with our certified organic beans, all harvested last fall, in the following varieties:
Black Turtle – Common black bean with a thick skin and a meaty texture.
Hidatsa Red – Similar to a kidney bean but with a slightly nutty taste, these beans are good in salads, chilis, soups or served with grains.
Jacob’s Cattle – Big and meaty, taste & texture of new potatoes, traditional baked beans, chili.
Marrow – Plump, soft white beans that soak up the flavors of whatever you cook them with. Great soup beans.
Pinto – Earthy flavor, great in Mexican cooking, falls apart under long cooking.
Tiger Eye – Rich, hearty flavor, with a smooth texture and tender skins.
Zebra – Smooth, creamy texture, full-bodied flavor, good all-purpose bean.
We are very low in stock with some of these beans, and (as you can see) are completely sold out of many others. The good news is that bean harvest is just around the corner. We already know that some of the beans will not be producing well, as we had a very dry spell right after planting, and many of the seeds never germinated, or germinated much too late. But we are hopeful to have more beans available for you soon!
We plan to have corn meal and grits available for you Saturday, as well as a selection of our thick wool hiker socks—perfect for those cool fall nights that are in store for us soon.
Ask me about getting a whole lamb for your freezer this fall! These lambs are grazed on fresh pasture each day all spring/summer/fall and fed hay only (plus minerals) during the few winter months that we house them in the barn.

The Hedgehog (Hydnum Repandum) mushroom is a new seasonal item for us. Flavor is similar to chanterelle, but can be used in many different dishes.
Great in casseroles, with pasta, and goes well in any meat dishes.
Perfect for folks who have trouble dealing with the texture of some mushrooms.

SWEET CORN is back! Our next field is now producing the variety known (for good reason) as Incredible. It’s a super sweet mid-season homozygous type with the sugary enhancer endosperm that makes for delicious fresh eating!

Black Turtle – Common black bean with a thick skin and a meaty texture.
Hidatsa Red – Similar to a kidney bean but with a slightly nutty taste, these beans are good in salads, chilis, soups or served with grains.
Jacob’s Cattle – Big and meaty, taste & texture of new potatoes, traditional baked beans, chili.
Marrow – Plump, soft white beans that soak up the flavors of whatever you cook them with. Great soup beans.
Medley – A random assortment of our beans that is great for soup. Also beautiful!
Pinto – Earthy flavor, great in Mexican cooking, falls apart under long cooking. Also have a limited supply of split pintos for $1/pound.
Tiger Eye – Rich, hearty flavor, with a smooth texture and tender skins.
Zebra – Smooth, creamy texture, full-bodied flavor, good all-purpose bean.
We plan to take freshly ground corn meal and fine grits/polenta from our Wapsie Valley certified organic, non-GMO corn, and perhaps a bit of our wool.

This week we will be at market with our certified organic beans in the following varieties:
Black Turtle – Common black bean with a thick skin and a meaty texture.
Hidatsa Red – Similar to a kidney bean but with a slightly nutty taste, these beans are good in salads, chilis, soups or served with grains.
Jacob’s Cattle – Big and meaty, taste & texture of new potatoes, traditional baked beans, chili.
Marrow – Plump, soft white beans that soak up the flavors of whatever you cook them with. Great soup beans.
Medley – A random assortment of our beans that is great for soup. Also beautiful!
Painted Lady – Slightly sweet, with a smooth, creamy texture.
Pinto – Earthy flavor, great in Mexican cooking, falls apart under long cooking. Also have a limited supply of split pintos for $1/pound.
Tiger Eye – Rich, hearty flavor, with a smooth texture and tender skins.
Zebra – Smooth, creamy texture, full-bodied flavor, good all-purpose bean.
We plan to take freshly ground corn meal and fine grits/polenta from our Wapsie Valley certified organic, non-GMO corn, and perhaps a bit of our wool.

Michigan Summer Salad (pictured above)
Ingredients
For the eggs
6 large eggs
1 qt. homemade or store-bought pickled beets
For the salad
1 tsp. ground smoked paprika or chile pepper flakes
1/2 cup plus 2 tsp. extra virgin olive oil
1 clove garlic
1/3 cup vinegar – rice or red wine or other favorite
1 Tbs. Dijon mustard
5 oz. (about 5 cups) mixed baby greens
1 oz. (about 1 cup) mixed herbs and edible flowers, such as lovage, flowering chives, shiso, fennel fronds, nasturtium, goose tongue, and basil, thinly sliced
5 medium radishes thinly sliced, preferably on a mandolin
1 medium kohlrabi or 9 oz. broccoli stems, peeled, cut in half, and thinly sliced, preferably on a mandolin
1 oz. (about 1 cup) finely grated favorite cheese
1 Tbs. finely grated lemon zest (from 1 large)
Preparation
For the eggs
Bring a 2-quart pot of water to a boil over high heat. Gently add the eggs, reduce the heat to a simmer, and cook for 7 minutes. Drain immediately and run under cold water until the eggs have cooled completely. Peel and transfer to a medium bowl.
Carefully pour enough of the pickling liquid over the eggs to cover, leaving the beets behind in the jar. Cover with plastic wrap and refrigerate for at least 24 hours.
For the salad
In a mortar and pestle, combine the 2 tsp. of the oil, garlic, and a generous pinch of salt and pepper. Pound the mixture to a paste, transfer to a medium bowl and whisk in the mustard and the vinegar. In a slow, steady stream, whisk in the remaining 1/2 cup oil. Season to taste with salt and pepper.
In a large bowl, combine the greens, herbs, flowers, kohlrabi, radishes, and season to taste with salt and pepper. Toss to lightly coat with the vinaigrette and gently transfer to a large serving platter.
Remove the pickled eggs from the brine and gently pat dry. Halve the eggs lengthwise and sprinkle the cut sides with the flakey sea salt. Arrange the eggs over the greens. Evenly sprinkle the cheese and lemon zest over the salad and serve.
