Maple Creek Sugars of Fremont
Doug & Tate Luchies have been producing wonderful maple syrup & honey for over 8 years on their farm.  have several beautiful gift bottles for Christmas gift giving as well.

From the hoophouse:  Spinach, kale, swiss chard, lettuce, arugula,
turnips, and beets.  Limited quantities, so come early.  We sold most
of the greens in the first hour of market last week.
Veggies in storage: Carrots, winter squash, pie pumpkins, potatoes,
onions, and garlic.
Jam and Jelly:  Our homegrown fruit mixed with a touch of local honey
and natural pectin; simple and delicious.  Strawberry Jam and Grape
Jelly. A lovely last minute gift.
Herbal Salves:  We’ll have our salves made from herbs we wildcrafted
this spring and summer.  We infuse them in organic olive oil for a
healing base.  Experience the healing of plant based medicine.

Our steers are in large pens for the winter so they get outdoors and exercise.  They are getting all our quality hay they can eat, plus a little home-grown and ground- on-the-farm grain mostly in winter. Feeding cows small amounts of good grains are like humans eating small portions of dessert.  It’s ok for them as long as grass and legumes are their main diet.  The steers are hung to age and processed by Ebel’s Meats in Falmouth, a family-run USDA operation.

In addition to Grassfield’s famous Dutch process Goudas & Cheddars, we will now carry a selection of cheeses from Cowslip Creamery! Located on Lubbers Farm in West Michigan, Cowslip is dedicated to making excellent cheese the old fashioned way, by hand, using fresh milk from cows grazing sustainable pastures. This week try either the artisan Phocas, or Brigid. Also we’ll have a selection of delicious Flatbread Crackers from the Lubber’s on-farm Little Rooster Bakery!

This “Italian Ham” as it is widely known, is salted and air dried for a lengthy period. After curing, prosciutto is sliced into paper thin pieces which are usually slightly transparent. It is typically eaten uncooked, on charcuterie plates, wrapped around fruit and vegetables, or in salads. In some cases, prosciutto may be lightly cooked, as is the case when it is tossed with pasta.

Pastries for Saturday:  We will be baking our Cranberry Orange Scones, Truly Ginger Scones, and our Michigan Cherry Scones.  All of our scones are made with organic butter and cream, fresh eggs, and a pinch of organic sugar. Deep Mud Brownies.

Granola Baked in our wood-fired brick oven after the intense bread-baking heat has dissipated (after several days).  They are baked at a low temperature to ensure that the nutrients in the grains and seeds remain intact!  Please note, these granolas are SWEETENED ONLY WITH MICHIGAN HONEY!  There is absolutely no refined sugar in them.
