Food Demo!! Stop by and see us demo two different ways to cook the grits from Shady Side Farm—on the stove top and in the instant pot. We’ll start about 10 am and if you hang around long enough, you can have a taste!
This week we will be at market with our certified organic beans:
Bean Medley – A mixture of several of our beans, good for soup.
Black Garbanzo – Nutty flavor, firm texture. Good for salad, soup, hummus. (Almost gone.)
Black Turtle – Common black bean with a thick skin and a meaty texture.
Green Flageolet – Creamy, firm texture and a sweet mellow flavor. A quick-cooking bean. (Limited supply.)
Hidatsa Red – Similar to a kidney bean but with a slightly nutty taste, these beans are good in salads, chilis, soups or served with grains.
Painted Lady – Slightly sweet, with a smooth, creamy texture.
Yellow Indian Women – These buttery beans retain their shape well, and are less starchy than some other beans. Good all purpose bean.
Zebra – Smooth, creamy texture, full-bodied flavor, good all-purpose bean.

Corn Meal & Grits/Polenta
Our corn is Wapsie Valley, which is a yellow & red open pollinated corn that dates back to the 1850s. We have always grown hybrid corn, but recently started growing open pollinated corn. Last year we grew both on the same farm, under the same growing conditions, and ran a protein test on them. The hybrid came back with test results of 7.3% protein and the Wapsie Valley came back as 10.2% After harvest we carefully clean our corn, removing broken kernels and other seeds that have gotten mixed in. It’s then delivered to the DeZwaan Windmill in Holland, where it is stone ground and made into grits/polenta or corn meal. Since no preservatives are added, it’s best to keep our corn products refrigerated or frozen. SHORT RIBS:  I like to cook up a large crock pot of them, remove bones and fat, and then use the beef for Stroganoff, Asian beef with rice, etc.

Fresco Mercato began as a search for flavored pasta.
Disappointed by the lack of flavor in every brand I tried, I decided to try
my hand at it and was able to produce a pasta that held its flavor after
cooking.
Through the Muskegon Community College Entrepreneurial program, I
gained valuable insights necessary to build a business plan and I
launched Fresco Mercato in 2014. I originally was licensed and began
producing at The Starting Block in Hart, Michigan.
After Kitchen 242 opened at the Muskegon Farmers Market, I moved
production there in early 2016.
September 2017 I began renting my own facility in Muskegon Heights
where, in December 2017 I successfully began producing a Gluten Free
Garlic Parmesan option and beginning in January 2018 I added an All
Organic option with 3 flavors; Garlic Parmesan, Tomato Basil & Lemon
Pepper.

This week we will be at market with our certified organic beans:
Bean Medley – A mixture of several of our beans, good for soup.
Black Garbanzo – Nutty flavor, firm texture. Good for salad, soup, hummus. (Almost gone.)
Black Turtle – Common black bean with a thick skin and a meaty texture.
Green Flageolet – Creamy, firm texture and a sweet mellow flavor. A quick-cooking bean. (Limited supply.)
Hidatsa Red – Similar to a kidney bean but with a slightly nutty taste, these beans are good in salads, chilis, soups or served with grains.
Painted Lady – Slightly sweet, with a smooth, creamy texture.
Yellow Indian Women – These buttery beans retain their shape well, and are less starchy than some other beans. Good all purpose bean.
Zebra – Smooth, creamy texture, full-bodied flavor, good all-purpose bean.

Corn Meal & Grits/Polenta
Our corn is Wapsie Valley, which is a yellow & red open pollinated corn that dates back to the 1850s. We have always grown hybrid corn, but recently started growing open pollinated corn. Last year we grew both on the same farm, under the same growing conditions, and ran a protein test on them. The hybrid came back with test results of 7.3% protein and the Wapsie Valley came back as 10.2% After harvest we carefully clean our corn, removing broken kernels and other seeds that have gotten mixed in. It’s then delivered to the DeZwaan Windmill in Holland, where it is stone ground and made into grits/polenta or corn meal. Since no preservatives are added, it’s best to keep our corn products refrigerated or frozen. Excerpts from a laying hen’s diary:
Jan 14. Old Rooster giving the stink eye toward the young roosters; he sees they are
developing spurs.
Jan 15. Sisters getting snarky; too many days cooped up with one another. Could go
outside but too white, too cold.
Jan 16. Little sun on ceiling was left on all day. Why go out to the big sun in the sky.
Jan 17. Our human providers doing their best make us comfortable everyday with alfalfa
bedding, local certified organic feed and fresh water but it’s not enough. Dukkha; we
want more. We remember strawberries, corn, squash, kale, scratching in the pasture, dust
baths.
Jan 18. Warming in the air, our hearts quicken, big sun bright with the promise of
warmth. More of us venture out. Less snarkiness among sisters, Rooster a bit more
relaxed.
Excerpts from the a succulent frozen meat chicken diary:
Each day the same, Nirvana, expect nothing but what is at the moment.
Potatoes don’t have diaries. Empty of thought they know they are better than the plain
ol’ white potatoes in the grocery store and wait to be sorted for market.

This week we will be at market with our certified organic beans:
Bean Medley – A mixture of several of our beans, good for soup.
Black Garbanzo – Nutty flavor, firm texture. Good for salad, soup, hummus. (Almost gone.)
Black Turtle – Common black bean with a thick skin and a meaty texture.
Green Flageolet – Creamy, firm texture and a sweet mellow flavor. A quick-cooking bean. (Limited supply.)
Hidatsa Red – Similar to a kidney bean but with a slightly nutty taste, these beans are good in salads, chilis, soups or served with grains.
Painted Lady – Slightly sweet, with a smooth, creamy texture.
Yellow Indian Women – These buttery beans retain their shape well, and are less starchy than some other beans. Good all purpose bean.
Zebra – Smooth, creamy texture, full-bodied flavor, good all-purpose bean.

Corn Meal & Grits/Polenta
Our corn is Wapsie Valley, which is a yellow & red open pollinated corn that dates back to the 1850s. We have always grown hybrid corn, but recently started growing open pollinated corn. Last year we grew both on the same farm, under the same growing conditions, and ran a protein test on them. The hybrid came back with test results of 7.3% protein and the Wapsie Valley came back as 10.2% After harvest we carefully clean our corn, removing broken kernels and other seeds that have gotten mixed in. It’s then delivered to the DeZwaan Windmill in Holland, where it is stone ground and made into grits/polenta or corn meal. Since no preservatives are added, it’s best to keep our corn products refrigerated or frozen. Eggs. Our laying hens, having outside access, often brave the wintery wonderland. Though, we find that many of them elect to stay inside watching Chicken Run reruns while snacking on local certified organic feed, organic apples and second cutting alfalfa hay.
Whole frozen chicken, 6-8 lbs. Range free, local certified organic feed. These birds, unlike our laying hens, are not so concerned with the frigid temperatures we are experiencing these days.

Special this week: Short Ribs $3 a lb, normally $3.50 per lb.  I like to cook up a large crock pot of them, remove bones and fat, and then use the beef for Stroganoff, Asian beef with rice, etc.
Grilling Steaks ~   Tenderloin, New York Strip, Ribeye, Porterhouse, T-bone, Sirloin, Cubed Steak, Skirt Steak, Kabob Beef
Cubed Steak -We eat it about once a week – pan-fried in a little butter and EVOO, about 2-3 minutes per side.  It’s a quick supper!
Braising Beef ~ Stew Meat, Round Steaks and yes, we have grilled round steak!
Roasts ~ Chuck,  Rolled Rump Roast, English and Arm Roasts,
Brisket!

PANETTONE is here!  This Italian Christmas bread is made with rum-soaked dried fruits, toasted almonds, and fresh orange and lemon zest.  It is visually dramatic and scrumptious! $15/loaf. Serves 4—8.
CHOCOLATE CHERRY BREAD:  Dark chocolate batons, organic cocoa, vanilla, and dried Michigan cherries in a sumptuous dessert loaf.  $10 We only bake this once a year!
GINGERBREAD CHILDREN:  Based on Charlie’s grandmother’s recipe, these lovely cutout cookies will delight the young and the young at heart.  $2.00 each or 5 for $9.00.

Winter arrived on the farm this week, and as I sit here writing this note, I am watching the snow silently accumulate on the fields. It’s a good feeling to see the farm slip below this blanket of white. We made the most of last weekend’s warm weather and crossed off almost everything that remained on the fall to-do list, and this Saturday’s market will be our last for the season. And this has been a great season, the farm’s best so far, in part because of all you faithful Sweetwater Market customers: Thank you so very much.
